Keto prosciutto-wrapped asparagus with goat cheese

Ingredients

4 servingservings

  • 12 12 pieces of green asparagus
  • 2 oz. 50 g prosciutto, in thin slices
  • 5 oz. 150 g goat cheese
  • ¼ teaspoon ¼ teaspoon ground black pepper
  • 2 tablespoons 2 tablespoons olive oil

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat your oven to 450°F (225°C), preferably with the broiler function on.
  2. Wash and trim the asparagus.
  3. Slice the cheese into 12 pieces, and then divide each slice in two.
  4. Cut the slices of prosciutto in two pieces lengthwise, and wrap each piece around one asparagus and two pieces of cheese.
  5. Place in a baking dish lined with parchment paper. Add pepper and drizzle with olive oil.
  6. Broil in the oven for about 15 minutes until golden brown.

Tip!

Make it your way! This recipe leaves the asparagus crisp tender. If you prefer your asparagus on the softer side, go ahead and parboil them for a minute or two.

    Where do you find the carb, calorie, fat counts for a serving?

    I have a similar question as Rhonda. I see the fat/protein/carb counts per recipe however I don't see the calorie count per serving.

    Delicious although next time I will use thicker asparagus spears. 15 minutes at 450 is far too long for thin asparagus so I took them out at 10 minutes and they were still a little overdone, although the cheese and proscuitto were just getting there. Tastes like a treat though!

    This is fantastic! My family loved it, and it is easy to make. It is relatively expensive--it cost me about $20 for all the ingredients at the local grocery. However, I'm sure the cost would come down significantly if I shopped at Costco for the ingredients.
