With just a few superstar ingredients, you can have an amazing low carb version of the classic rice pudding. Bam! Nearly immediate gratification for the holidays.

Ingredients

  • 12 oz. (123 cups) 350 g (400 ml) cottage cheese
  • 1 cup 240 ml heavy whipping cream
  • 1 tsp 1 tsp vanilla extract
  • 1 tsp 1 tsp ground cinnamon
  • 2 oz. (713 tbsp) 55 g (110 ml) fresh raspberries or other berries of your liking

Instructions

  1. Whip the heavy cream until soft peaks form. Add the vanilla extract. You can mix in the cinnamon at this stage, or sprinkle it on top right before serving.
  2. Gently fold in the cottage cheese but don't over mix. Let the pudding settle in the fridge for about 10-15 min.
  3. Serve with red berries of your choice, whole or mashed.

    Regarding the recipe for "rice" pudding -- I was skeptical but tried it...wow, this was way more like real rice pudding than I expected! It wasn't as hearty, more light, but I found that to be a good thing. My family and I celebrated Bodhi Day (Buddha's enlightenment) on Dec 8th and rice pudding is kind of traditional...this was a good replacement. Thank you :)

    If you want it thicker, strain it. For those who don’t like it, you might try adding a little sweetener. I do. And cut back on the vanilla which I found over powering.

    We have not tested this with ricotta, but it can work well as a substitute for cottage cheese, generally speaking.

    I've made this twice. Much better the second time, when I rinsed and strained the curds before adding them. Tastes less "cheesey" and more like the real thing. I like mine with about 2 Tbsp of granular sweetener per 6 servings.

    Very good ! We implemented w/ 1 teaspoon of chia seeds & 1 teaspoon bocha sweet. A few red raspberries & mint sprig on top added pizzazz. .
    Excellent Dessert
