Ingredients

  • 14 oz. 400 g turnip
  • 1 (2¼ oz.) 1 (60 g) small carrotsmall carrots or appleapples (optional)
  • 1 cup 240 ml mayonnaise or vegan mayonnaise
  • 13 cup (15 oz.) 80 ml (5.5 g) fresh parsley or fresh coriander or fresh mint finely chopped
  • 1 tbsp 1 tbsp cider vinegar
  • salt and pepper

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Rinse and peel the vegetables. You don't need to peel the apple, just core it. Grate everything into rough pieces by hand or in a machine. Put in a bowl.
  2. Add all other ingredients and mix. Season to taste.
  3. Serve as a fresh side dish to fish, meat or poultry.

Tip!

Live it up—swap out the turnip and go with the stem of broccoli, black radish or kohlrabi. Variety is the spice of life!

    Hi, I don't remember where to find the explanation why this recipe is ''low carb'' since it's 93% of fat and only 5g net carbs! Remember I did saw that one other comment but don't find it in the site!

    Nancy, have a read through this guide; specifically footnote 3 under the Keto section. In order to earn the keto green circle, there must be adequate protein as well. You could definitely have this as a side dish with your protein of choice to make a well rounded meal!

    Just made this for the first time. Used considerably less mayonnaise and a bit of carrot. Very easy and very nice. Whacked the chopped turnips and carrots into a food processor and the whole thing took 5 mins. Haven't had turnips for decades but will have more from now. Works really well for coleslaw.
