Ingredients

Vanilla whipped cream
  • 2½ cups 600 ml heavy whipping cream
  • ½ tsp ½ tsp vanilla extract
  • 1 1 star anise (optional)
  • 2 tbsp 2 tbsp butter
  • 1 1 egg yolkegg yolks
Cinnamon apples
  • 3 tbsp 3 tbsp unsalted butter
  • 3 (1 lb) 3 (450 g) apple, preferably a type that is firm and tart, for example Gravensteiner or Granny Smithapples, preferably a type that is firm and tart, for example Gravensteiner or Granny Smith
  • 1 tsp 1 tsp ground cinnamon

Instructions

Instructions are for 6 servings. Please modify as needed.

    Vanilla sauce

  1. Add the butter, vanilla, optional star anise, and 1/4 of the heavy whipping cream to a saucepan. Bring the mixture to a light boil, over medium heat. Lower the heat and simmer for 5 minutes or more until the sauce turns creamy. Stir frequently.
  2. Remove from the heat and remove the star anise. Add the egg yolk while whisking vigorously. Place in the refrigerator and let cool completely. You can prepare the flavored cream up to 1 day before, and refrigerate.
  3. Whisk the remaining heavy whipping cream in a bowl until soft peaks form, and fold in the refrigerated sauce.
  4. Place back in the refrigerator for another 30 minutes or more. You can add the cream sauce to serving cups to make it thicken up faster.
  5. Cinnamon apples

  6. Wash the apples and peel them if you want to but there's really no need for that. The peel adds color, flavor and texture.
  7. Core the apple and slice thinly. Heat up butter in a frying pan and brown the slices until golden. Add cinnamon towards the end.
  8. Serve the apples warm with the vanilla sauce.

Tip

The sauce goes great with various desserts, where you would normally have served vanilla custard. For example, you can heat a couple of blackberries or raspberries and serve with the vanilla sauce. Put it in the freezer and you'll have a luxurious ice cream!

    No not the fridge!!! You just keep it away from any heat where it is a cool temperature out of the sun or and away from radiators!

    American way of cooking and totally useless for Europeans as we weigh and measure. Tablespoons also a nightmare on here too - much bigger in Britain than elsewhere. A tablespoon is what it is in Britain, a spoon for the table - so a serving spoon. A desert spoon is half the size of these tablespoons!

    Whipping cream when whipped should result in double the size.

    To be fair the quantity is there in metric. Thought you were asking about the quantity.so sorry I misunderstood you. Whip the cream to whatever thickness you like!

    We only calculate and list the macronutrients, I don't have a number for how much of the carbs comes from sugar.

    This wasn't as good as I dreamed it would be. I think I may add a little sweetener like swerve to the vanilla sauce or find a slightly sweeter apple. I think it needs a little something more.

    That should work well, but it may not thicken exactly the same.

    Chilled coconut cream whipped in a chilled bowl (with a touch of powdered lakanto) came out lovely! Like a light mousse. Maybe a bit runnier than heavy cream would have been but still holds the apple slices up. Totally satisfies my daughter's hankering for apple pie without bringing one into the house:-)!

Maybe a bit runnier than heavy cream would have been but still holds the apple slices up. Totally satisfies my daughter's hankering for apple pie without bringing one into the house:-)!

    And I bet it made the house smell wonderful!

    The Vanilla Cream is about 4 carbs per serving.

    This was an excellent dish. I did add a little sweetener (Swerve) to the sauce. I tried it with granny smith apples which were just a little too tart for me. I will try it again next time with a few strawberries or blueberries as the fruit, probably warmed with a little cinnamon and or almonds, who knows. Seems like the options are endless. The sauce/custard was absolutely delicious and I will be making this often. Thank you!

    The default number of servings for this recipe is 6. If you use the drop down to choose a different number of servings, then the ingredient quantities will automatically be cut (or increased) to match that. You can round up or down to an amount that makes sense or you can choose a different number of servings.

    I like this but it always comes out too soupy. What if ? 2 egg yolks and whisk it in when the mixture cools a bit so it would thicken. I'm thinking emulsify like a fat and a yolk as is the process for making mayo. Does anyone think this would work?

    You could try that, but the simmering of the cream mixture, refrigeration, whisking the yolk, and folding in of the whipped cream should be sufficient to thicken the mixture.

    Tried that. I carefully followed the recipe. But, using heavy cream with no stabilizer or additives is perhaps, affecting the result. By adding two generous tablespoons of chia seeds, the resulting sauce came out thicker.

    Ahhh, Success!! I made this again and it came our just right. I used a different brand of heavy cream and carefully watched it simmer for five minutes.
    No problem, the mistakes taste really good , but this is even better.
