  • 123 cups 400 ml coconut milk
  • 1 cup 240 ml blueberries, fresh or frozen
  • 1 tablespoon 1 tablespoon lemon juice
  • ½ teaspoon ½ teaspoon vanilla extract

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. Place all ingredients in a tall beaker and mix it smooth with a hand mixer.
  2. Add lemon juice to taste.

Tip

For more satiety, add 1 tablespoon of coconut oil or any other healthful oil. You may also substitute the coconut milk for 1¼ cups Greek yogurt if you prefer a dairy-based smoothie. If so, add a little water for a more liquid consistency.

    We have a blueberry and full fat Greek yogurt smoothie every morning! Hubby is down from a size 44 pants to a size 38. I'm down two dress sizes.

    I'm allergic to most starches and yeast, just to name a few of my food allergies, as well as being gluten intolerant (thanks to an autoimmune thyroid disorder). LCHF has been perfect for me.

    My gluten-free and sugar-free cheesecake was a major hit at my Mom's birthday party. It was more popular than the Black Forest cake that was also available. I made it with a pecan and almond crust and used honey as a sweetener (you need so much less than if you used sugar and I refuse to use artificial sweeteners). While it wasn't the lowest carb dessert it was a lower carb, special occasion treat. I use local honey to help with my seasonal allergies. My husband and I feel so much better on LCHF. It is surprisingly easy. We thought we'd miss potatoes and other starches but we really don't, especially since I'm now not eating foods that made me sick.

    Yes, there are different kinds. Use one that is unsweetened and I hope you'll find one you like. The cans we use are 400 ml (about 13 fl.oz).

    I noticed that in the ingredients and the picture it calls for lemons. However, in the instructions it says to "Add lime juice to taste." So would that mean the recipe really calls for lemons and not limes?
    Also, I was wondering if there was anything else that could be used in the place of coconut milk?

    Can I pick 2 weeks worth of food and just repeat food, ? I don't like fish or seafood and I only like white cheese. can I replace the cheese part of recipes with this cheese?
