Ingredients

Green pesto sauce
Salmon and broccoli
  • 2 lbs 900 g salmon, boneless filletsalmon, boneless fillets
  • 4 tbsp 4 tbsp green pesto
  • salt and pepper, to taste
  • 1 lb (5 cups) 450 g (1.2 liters) broccoli

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Place the salmon skin-side down in a greased baking dish. Spread pesto on top, and salt and pepper to taste. Spread out the broccoli around it.
  2. Bake in the oven at 350°F (175°C) for about 20 minutes, or until the salmon flakes easily with a fork.
  3. Meanwhile, stir the pesto sauce ingredients together and refrigerate.
  4. To serve, plate the salmon with the pesto sauce and enjoy!

Tip

This hearty salad with greens, pecans, seeds, and a healthy dose of fresh, homemade vinaigrette also pairs beautifully with this salmon dish.

    I put it over partially slices of butternut squash. Very good, I think I preferred it with just the pesto, but my friend loved the sauce. Oh, and I too used mahi mahi.

    I don't eat greek yogurt. What can I use as substitute, sour cream? Please advise.

    I can't buy Greek yoghurt where I live so I used crème fraîche instead (also used red instead of green pesto as that is what I had available). My son told me it was delicious.

    25 teaspoons of Greek yogurt? What a very odd way to say 1/2 cup of yogurt, and one extra teaspoon. Math is a beautiful thing. So is this salmon!

    I lost a jar of pesto midway through the recipe, so I just used Kefir yogurt with lemon and dill. Dialed way back on the mayo too. Still really tasty!

    Just did this recipe tonight. AWESOME !! Roasted the broccoli with the salmon and both items were ready at 20 mins. The sauce is EXCELLENT for dipping the Keto buns into !! nom nom nom

    This was very easy and very delicious. I didn't make the sauce at all. The pesto on the salmon was crusty and delicious. I will certainly do this again. I had the salmon in my freezer and pesto left over from another DD recipe.

    This recipe is easy and delicious! The sauce is wonderful, but the broccoli did not have enough time to cook at 350 for 20 minutes. I will be steaming the broccoli for a bit to get the right texture next time I make this dish.
