Italian keto chicken parmesan with cabbage pasta
A simple, creamy chicken parmesan dinner with the added tang of sundried and regular tomatoes. It works just as well for regular weekdays meals as it does for a festive weekend get-together. Serve it on top of butter-fried cabbage strips in place of pasta. A true keto success!

Italian chicken stew
- 2 tbsp 2 tbsp butter for frying
- 1½ lbs 650 g boneless chicken thighs, sliced
- ¼ cup (1 oz.) 60 ml (28 g) sun-dried tomatoes in oil, coarsely chopped
- 6 (3½ oz.) 6 (100 g) cherry tomatoes, cut into quarters
- 1 1 garlic clove, finely choppedgarlic cloves, finely chopped
- ¾ cup 180 ml heavy whipping cream
- 1¼ cups (3½ oz.) 300 ml (100 g) shredded Parmesan cheese
- 1 cup (1 oz.) 240 ml (30 g) baby spinach
- salt and pepper
Cabbage pasta
- 11 oz. 300 g green cabbage, shredded
- 2 tbsp 2 tbsp butter for frying
- salt or pepper

Making low carb simple
Instructions
- Heat butter in a large frying pan over medium heat. Fry the chicken for a couple of minutes, it doesn't have to be thoroughly cooked. Season with salt and pepper.
- Add the tomatoes to the frying pan together with the garlic.
- Add heavy cream. Let it simmer on medium heat for about 5 minutes.
- Add shredded parmesan and let it simmer for an additional 10 minutes. Season with salt and pepper to taste.
- Meanwhile, in a large frying pan, over medium heat, melt the butter. Add the cabbage and fry until tender. Salt and pepper to taste.
- Just as you are ready to serve, stir the spinach into the cream chicken skillet. Plate the cabbage and top with the creamy chicken sauce.

I was going to try it with zucchini noodles next time. I didn't care for the cabbage "noodles" very much. I'm not sure of the carb exchange between cabbage and zucchini, however.

If you are a novice cook, watch the simmering cream carefully or you can break the sauce or burn the bottom. Just gentle - not vigorous - bubbles at the surface is what you want for the simmer and you want to stir often, being sure to scrape the pan.

I used a chicken breast per portion. It will also depend on the macros you have set yourself, 7oz was well within my protein levels from a moderate protein diet.
This recipe has been updated. It is one of our higher protein meals at 43g but that's still within the range that will get most people to their adequate protein levels for the day.

We have a wood-fired pizza oven and have a blow out every now again with real pizza to reset our system, but cook a lot of meals in it as well. Still, in general, every meal on this website we have cooked has been restaurant quality (we had to restaurants as well) Out of 224 main meals I have cooked, maybe 10 were failures, that's a pretty good hit rate in my book.
We rarely eat the same recipe twice and don't do leftovers for lunch as we prefer salads due to the Australian climate.

You may use either chicken thighs or chicken breast. My family prefers breast, so that is what I use. There will be just a bit less fat in the chicken breast than in the chicken thighs.
