This is a great one for leftovers and for the freezer if you reheat gently. Good suggestion.

This was my first ever keto meal. It was absolutely delicious. Found it quite hard not to eat it all in one go, but that was the siren song in my brain, in reality one serving was plenty, very rich & filling. Think I might be hooked on Keto, see how I get on over the next fortnight. Thank you.

Instruction #6 says: To serve, distribute cabbage on the plates. Add the spinach to the creamy chicken skillet and stir. Then top the creamy chicken sauce over the cabbage.

What can i use as a substitute for cabbage?

I was going to try it with zucchini noodles next time. I didn't care for the cabbage "noodles" very much. I'm not sure of the carb exchange between cabbage and zucchini, however.

This was really, really good! Great first recipe! I printed the weekly recipes for one person, but the printed instructions still said this recipe is for four servings, which I noticed after I had already eaten half of it. So I freaked out for a minute, lol, but then realized it really was actually for just one person - with leftovers for tomorrow which I’m so happy about! 😄

My first keto meal off the website and my first of the 2 Week Challenge. Was a tad rich for my palette, maybe I will adjust, but the flavors were good. I ended up straining off some of the sauce. I added the baby spinach to the heavy cream just before it thickened, just to wilt the spinach a bit. The sauteed cabbage (it is technically not fried, just sauteed until soft, "fried" would be crispy and brown) was better than I thought it would be, but then, it IS sauteed in butter. Served it with a side of roast broccoli and garlic with the same parmesan cheese lightly sprinkled on the top during the last minute of cooking..

If you are a novice cook, watch the simmering cream carefully or you can break the sauce or burn the bottom. Just gentle - not vigorous - bubbles at the surface is what you want for the simmer and you want to stir often, being sure to scrape the pan.

EXCELLENT!!! I really enjoyed the rich creamy texture and the serving size left me stuffed. Everything was really delicious. I cooked 2 serving sizes and was grateful to have read comment by Crystal (#52) that it could be frozen. I just started the 2 week keto challenge. The breakfast was very satisfying as well. I am really excited about trying all of the other recipes!

Second day of this diet. I liked all of the food. I don’t do the mayo or the sour cream because it doesn’t agree with me, but I didn’t need them.

New question...our Keto experience starts tonight and already I'm confused. Have it set on "4 servings" so two people can have dinner tonight and lunch tomorrow. Subsequently however, recipe says to cook 1.75 POUNDS of chicken (28 oz). That's 7 ounces of chicken per person per serving. Isn't that about twice the recommended ounces per serving? Why so much? Or, have I missed something somewhere?

This is a firm family favorite- simple recipe, simple flavours. Not fussy to cook. An addition to the meal planner even for the non keto family members. :)

I used a chicken breast per portion. It will also depend on the macros you have set yourself, 7oz was well within my protein levels from a moderate protein diet.

This recipe has been updated. It is one of our higher protein meals at 43g but that's still within the range that will get most people to their adequate protein levels for the day.

Tip: I wipped in 1/2 a small tea spoon of psyllium husk to the coconut cream before adding to the chicken. It thickened the sauce, (as I do not mix dairy with meat) It came out real nice and yummi!

Are you supposed to trim the fat off the chicken thighs before cooking?

Unless there is an excess of attached fat, it does not need to be removed.

This is my and wife's thirty- second week of keto, I have lost 18kg and my wife 9kg I have 8kg to go she has 10kg you get to a stage after eating keto for this long, you can't tolerate what others call normal food.
We have a wood-fired pizza oven and have a blow out every now again with real pizza to reset our system, but cook a lot of meals in it as well. Still, in general, every meal on this website we have cooked has been restaurant quality (we had to restaurants as well) Out of 224 main meals I have cooked, maybe 10 were failures, that's a pretty good hit rate in my book.
We rarely eat the same recipe twice and don't do leftovers for lunch as we prefer salads due to the Australian climate.
Keep challenging us with beautiful recipes.
    Cheers

New question - I’ve just added the ingredients to a well know carb tracker and it’s come up with 13g carbs per portion yet you state it’s 9g. I Can’t see why the big difference. Can anyone suggest why?

Carb trackers are known to be off due to user-submitted info and other errors. It could also be calculating total carbs, as opposed to net carbs.

Just a quick question I noticed in the written recipe is says chicken thighs but in the video it states chicken breast, does this alter anything ?

You may use either chicken thighs or chicken breast. My family prefers breast, so that is what I use. There will be just a bit less fat in the chicken breast than in the chicken thighs.

The written recipe carb count is going to be the most accurate. It updates automatically any time there is any kind of revision to a recipe.
