Zucchini noodles with tomatoes, mushrooms and Parmesan sauce

Zucchini noodles or zoodles are not only a fantastic gluten-free and low carb alternative to pasta but a brilliant base for any tasty dish. This healthy and colorful combination of zucchini, mushrooms and Parmesan cheese is as rich and flavorful as a creamy pasta. Zoodle-doodle-doo!

Ingredients

  • 1½ lbs 650 g zucchini
  • 2 tbsp 2 tbsp olive oil
  • 4 (1 lb) 4 (450 g) tomatotomatoes
  • 8 oz. (3¼ cups) 230 g (800 ml) mushrooms
  • salt and pepper, to taste
Sauce
  • 1 cup 240 ml heavy whipping cream
  • 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese, save a handful for serving
  • salt and pepper, to taste

Instructions

  1. Using a julienne peeler, slice the zucchini lengthwise into ribbons. Put the ribbons in a bowl and sprinkle with olive oil. Set aside to marinate and soften.
  2. Seed and chop the tomatoes finely. Chop the mushrooms.
  3. Heat a little olive oil in a skillet over medium-high heat. Add the mushrooms and cook until they are lightly browned. Season with salt and pepper.
  4. Stir together the cream and grated cheese in a saucepan. Bring just to a simmer over medium heat and cook a few minutes until you obtain a thick sauce. Season with salt and pepper.
  5. Reserve some tomatoes and mushrooms for garnish.
  6. Gently fold the vegetables, including the zoodles, into the cheese sauce, and garnish with the reserved tomatoes and mushrooms.
  7. Finish with the Parmesan cheese shavings.

Recommended special equipment

A julienne or vegetable peeler.

    If you look in the Nutrition info for this recipe you can see it is described as "Liberal low carb". It has 24g carbs per serving. I would guess that some people using the site want to eat more carbs than is usually given for a strict ketogenic diet, and this recipe might appeal to them. Also, I've no doubt that some people using the site are vegetarian and might be delighted to find a recipe which contains lots of vegetables.

    You should simply add chicken or shrimp and use half of the Zoodles!

    I used to use Zoodles made with Zucchini, but these gave me some bad intestinal distress. So, now when I want something that reminds me of "pasta", I just take ground meat and add it to low carb pasta sauce, (or the sauce presented here would be good too). I completely get rid of any "noodle".

    Gwen: The idea of not being in ketosis, eating a healthy paleo meal and unable to lose weight is ridiculous. People lose weight on Paleo at 50-70g of carbs all of the time. You do not need to be in ketosis to lose weight.

    Why no weights?

    Zucchinis and tomatoes vary in size - tremendously. How many grams Zoodles? How many grams Parmesan - my Parmesan - grated by me - comes out very fluffy. How do I know if 125 ml (precisely 1/2 a cap) is enough?

    Is this a cold dish? Are the Zoodles supposed to cook a bit in the simmering sauce?

    Simple may be fine, but these instructions carry it a bit too far.

    To make it a touch tastier, add mashed garlic or 1/4 teaspoon garlic powder along with 1/2 teaspoon kashmiri chili powder to give it a suttle kick and more flavour. I had it both ways and I think this was better.

    years-of-LCHF: I don't think it really matters. I put in 2 zuchinni and 3 campari tomatoes and it's fine. I say just put in to taste. This isn't exactly a recipe you can screw up. More a heartier soup/pasta, add more stuff? Want more liquid and less stuff? Then add less :/
