Ingredients

  • 1 tbsp 1 tbsp fresh chives or dried chives
  • ¼ cup (1¾ oz.) 60 ml (55 g) cottage cheese
  • ¼ cup 60 ml mayonnaise
  • 1 (4 oz.) 1 (110 g) yellow onionyellow onions
  • 2 (14 oz.) 2 (400 g) avocadoavocados
  • 1 (5 oz.) 1 (140 g) green bell peppergreen bell peppers
  • 3 oz. 85 g kale
  • 3 tbsp 3 tbsp olive oil
  • 4 4 eggeggs
  • salt and pepper

Instructions

  1. Mix chives, cottage cheese and mayonnaise in a small bowl. Season with salt and pepper. Set aside.
  2. Slice kale, onion and bell pepper. Peel and remove the pit from the avocados. Cut the avocados in wedges.
  3. Heat up olive oil in a skillet and fry the vegetables for a few minutes until softened and starting to turn golden brown. Season with salt and pepper.
  4. Make wells with a spoon or spatula and crack an egg in each well. Season the eggs with salt and pepper.
  5. Lower the heat and cook until the eggs are to your liking. Place a big lid over your skillet to cook the top of the eggs more efficiently. Serve with the cottage cheese.

Tip

If you have extra chives, why not make some chive butter? Just mix about a ¼ of a cup (4 tbsp) of chives with a stick of room temperature butter, and voila!

    since there was no kale available i swapped that for 50% endive and 50% savoy cabbage also added some purple brussels sprouts for color. tasted delicious!!

    I was skeptical about the cottage cheese and mayo ( didnt have chives), but holy cow does it taste great! So pleased with how it turned out!

    I wonder if you could develop a section for a vegan diet. Cheese features very strongly in your vegetarian recipes.

    This was really good. Forgot to get an onion, oops. Will add it next time. I didn't cook the avocado; added it at the end. Cottage cheese/mayo/chives delicious. A good dinner.
