Easy shrimp avocado boat
Ingredients
- 6 oz. 170 g shrimp, cooked
- 2 tbsp 2 tbsp mayonnaise or vegan mayonnaise
- 1 tsp 1 tsp tomato paste
- salt and ground black pepper, to taste
- 1 tbsp 1 tbsp red onion, finely dicedred onions, finely diced
- 2 (14 oz.) 2 (400 g) avocado, halved lengthwise, pit removed (see tip)avocados, halved lengthwise, pit removed (see tip)
- cayenne pepper (optional)
- 1 tsp 1 tsp dried chives or fresh chives, finely chopped (optional)
Instructions
- In a small bowl, mix together the shrimp, mayonnaise, tomato paste, salt, pepper, and red onion until well combined.
- For serving, top each avocado boat (2 per serving) with equal amounts of shrimp filling. Sprinkle with cayenne pepper if you like some heat and chives for a splash of color.
Tip
Make a slice in the bottom of the base of each avocado half to make it more stable on your plate.
The filling stays fresh in the refrigerator in an air-tight container for at least four days. Avocado halves may brown slightly around the edges.
Instead of shrimp, you can also use chopped cooked chicken, ham, or salmon.
