Keto cottage cheese chaffles
Ingredients
- ½ cup (32⁄3 oz.) 120 ml (110 g) cottage cheese
- 2 2 large egglarge eggs
- ½ cup (2 oz.) 120 ml (55 g) shredded mozzarella cheese
- ½ cup (2 oz.) 120 ml (55 g) shredded cheddar cheese
- 2 tbsp 2 tbsp thinly sliced scallion, plus extra for garnishthinly sliced scallions, plus extra for garnish
Instructions
- If there is excess liquid pooling around the cottage cheese curds, drain it before measuring. Otherwise, use it as is.
- Blend the cottage cheese until smooth, then whisk in the eggs. Stir in the mozzarella, cheddar, and spring onions. The mixture should be thick and spoonable, similar to oatmeal.
- Preheat a mini waffle maker until fully hot and lightly grease the plates. For extra-crispy chaffles, sprinkle a thin layer of shredded cheddar directly onto the bottom plate before adding the batter.
- Add about 2 tbsp of the mixture, close the waffle maker, and cook for 3–5 minutes, or until golden brown and the chaffle releases easily from the plates. Repeat with the remaining mixture.
- Transfer the chaffles to a wire rack to cool briefly and crisp up. Serve warm, garnished with extra spring onions, if desired.
Do cottage cheese chaffles need salt?
Probably not. Cottage cheese and cheddar are naturally salty, so taste the first chaffle before adding any extra salt to the remaining batter.
