Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Fill a large pot with water and bring to a boil over high heat.
  2. Optional: Make tiny wholes in the eggs using an egg piercer. This helps prevent eggs from cracking while boiling.
  3. Carefully, place the eggs in the boiling water.
  4. Boil the eggs for 5–6 minutes for soft-boiled eggs, 6–8 minutes for medium-boiled, and 8–10 minutes for hard-boiled eggs. Meanwhile set aside a medium-sized bowl, filled with ice water.
  5. Using a slotted spoon, transfer the eggs to the ice water bath and chill for 5-10 minutes, to cool the eggs. Peel, and serve with mayonnaise.

Serving suggestion

Enjoy your eggs with some fried asparagus and/or avocado and homemade mayonnaise. Another super-simple option is to eat the boiled eggs with butter. Mash them together in a small bowl. Add some fresh herbs if you are in the mood. Delicious!

    the total fat for 2 eggs and 2tbs of mayo is 11g but the fat for the mayo by itself is 58g? I'm confused. I need to keep my fat at 50g or under and this is contradicting.

    @Shara Why did you take the yolk out? If you take that out all you are left with is egg white and mayonnaise, plus any vegetable that you decided to have with it.

    How on earth did you get 58g of fat in two tablespoons - which are desertspoonfuls in England, not tablespoons - of mayo? I make my own mayo. Dead easy.

    How much asparagus can one eat? You don't say and it's in the photo. And also you say avocado is optional - how much? Prefer to have the measurements in grammes or ounces, not in approximations. I have to budget when I live alone. Thanks.

    That's going to depend on your carb threshold. Asparagus is keto/lchf friendly though! Again, the amount of avocado is also going to depend on your personal preference and carb threshold. Avocados come in all different weights.

    The word "mayonnaise" in the ingredient list is a hyperlink to our recipe. We recommend avoiding most commercial mayos as they have inflammatory vegetable oils.

    And this is why some diet doctor recipes are confusing! If you show the eggs with asparagus, it makes sense to count the asparagus carbs. Even as an optional extra. Otherwise, what’s the point of going to diet doctor and having to work out your own recipes?
