    You do not mention the classic French Vinaigrette which, in my opinion, is the king of low-carb dressing and the simplest one of all: oil + red wine vinegar + salt....! Well, I have to mention that I'm French and grew up with it.
    There are also many ways to vary the flavor by adding Dijon mustard, garlic, herbs or use different oils or vinegar (except balsamic vinegar which has sugar in it)
