  1. Preheat the convection oven to 400°F (200°C).
  2. Add the cottage cheese, cream cheese, hot sauce, garlic powder, onion powder, salt, and pepper to a blender or food processor. Blend until smooth and creamy.
  3. Transfer the mixture to a bowl and stir in the shredded chicken and most of the cheddar cheese.
  4. Spread the mixture into a oven-safe baking dish and sprinkle the remaining cheddar cheese over the top.
  5. Bake for about 20 minutes, or until the dip is hot and bubbly and the cheese is melted.
  6. Garnish with chopped chives or green onions and crumbled blue cheese before serving.

Variation

Swap the cheddar for Monterey Jack or a Mexican cheese blend for a different flavor. If you prefer a milder dip, use less buffalo sauce or stir in a little extra cream cheese.

Serving suggestion

Serve warm with celery sticks, cucumber slices, bell pepper strips, or homemade cottage cheese chips. It also makes a delicious filling for lettuce wraps or baked stuffed peppers.
