High-protein buffalo chicken dip
Ingredients
- 1 cup (7½ oz.) 240 ml (210 g) cottage cheese
- ¼ cup 60 ml hot sauce
- 2 tbsp 2 tbsp cream cheese softened
- 1 tsp 1 tsp garlic powder
- 1 tsp 1 tsp onion powder
- salt and ground black pepper to taste
- 5 oz. 140 g rotisserie chicken (meat)
- 6 oz. (1½ cups) 170 g (350 ml) cheddar cheese shredded, divided
- 1 tbsp 1 tbsp fresh chives or scallion choppedscallions chopped
- 1 oz. 28 g blue cheese crumbled
Instructions
- Preheat the convection oven to 400°F (200°C).
- Add the cottage cheese, cream cheese, hot sauce, garlic powder, onion powder, salt, and pepper to a blender or food processor. Blend until smooth and creamy.
- Transfer the mixture to a bowl and stir in the shredded chicken and most of the cheddar cheese.
- Spread the mixture into a oven-safe baking dish and sprinkle the remaining cheddar cheese over the top.
- Bake for about 20 minutes, or until the dip is hot and bubbly and the cheese is melted.
- Garnish with chopped chives or green onions and crumbled blue cheese before serving.
Variation
Swap the cheddar for Monterey Jack or a Mexican cheese blend for a different flavor. If you prefer a milder dip, use less buffalo sauce or stir in a little extra cream cheese.
Serving suggestion
Serve warm with celery sticks, cucumber slices, bell pepper strips, or homemade cottage cheese chips. It also makes a delicious filling for lettuce wraps or baked stuffed peppers.
