Ingredients

  • 1 lb 450 g beetbeets or rutabaga
  • 5 oz. (1 cup) 140 g (220 ml) feta cheese or blue cheese
  • 4 tbsp 4 tbsp olive oil
  • 1¾ lbs 800 g white fish filletwhite fish fillets
  • 5 oz. 140 g herb butter
  • salt and pepper

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat oven to 400°F (200°C).
  2. Rinse, peel and cut the beets into wedges, and place in a greased baking dish or on a baking sheet.
  3. Season with salt and pepper, but remember that the cheese will add salt too. Crumble the cheese on top and drizzle with half of the olive oil.
  4. Bake in the oven for 30-40 minutes or until the beets have softened. Lower the heat towards the end of the cheese already is starting to brown too quickly.
  5. Meanwhile, season the fish with salt and pepper and fry it in the remaining olive oil. The fish is done when it flakes easily with a fork.
  6. Serve the fish with the beets and herb butter or pink herb butter.

Tips

You can also brush the fish with olive oil and grill it.

If the beets comes with greens, don’t discard them! They’re amazing when sautéed with a little olive oil, salt, pepper, and red chili flakes.

    I had never prepared beets before - had eaten them and wasn't a fan - but got curious when I saw them paired with feta here. So glad I took the leap. This turned out amazing; the fish with herb & garlic butter was delicious, and the strong flavours of the butter and fish were really set off nicely with the earthy beets.

    I used frozen fish and baked it in the oven (400 degrees F for 30 mins), so that part was really simple; I even bought pre-crumbled feta just to make my life even easier. This is a great weeknight dish since there's minimal work- you just have to get the beets ready, and then everything goes straight in the oven. Definitely going into the rotation.

    Came back to note that I found the fish a bit bland, even with the herb butter, so I've taken to seasoning it generously with a packaged cajun-style spice mix. Deeelicious.

    I was surprised with the beetroots in a keto recipe but I guess they're fine as long as you don't exceed your carb limit for the day. And their combination with feta was delicious. As well as the fish but I think I would love everything as long as it has herb butter on it. I didn't fry the fish though but put it in the oven with beets for the last 15 minutes of baking.

    The beets and cheese (I used goat fetta) was AMAZING! Leftovers the next day cold with a green salad was great too. I am going to actually make these especially for lunches during the week. The family didn't really like the cod but that's just personal preference so I'll make this one again but with a different fish.

    40min isn't enough for beetroots cubes at 200°C ... rather 1h.

    Beets were possibly good- they were undercooked and need more time. The feta cheese on top was yummy.
    Herb butter is yummy. I left out the parsley and made a double batch. I use this on all my vegetables or when I'm sauteeing anything, automatic flavor and seasoning to anything. You won't need to salt your food because there's plenty in the butter.
