Ingredients

Chicken and marinade
  • 1¾ lbs 800 g skinless, boneless chicken thighs, cut into 1" (2.5 cm) pieces
  • 3 tbsp 3 tbsp olive oil
  • ½ ½ lemon, juice and zestlemons, juice and zest
  • 4 4 garlic clove, mincedgarlic cloves, minced
  • 1 tbsp 1 tbsp dried oregano
  • ½ tbsp ½ tbsp dried thyme
  • ½ tbsp ½ tbsp paprika powder
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
Salad
  • 5 oz. 140 g iceberg lettuce, cut into thin strips
  • 3 oz. (½ cup) 85 g (130 ml) yellow onion, thinly slicedyellow onions, thinly sliced
  • 5 oz. (¾ cup) 140 g (180 ml) tomato, divided in half and slicedtomatoes, divided in half and sliced
  • 1 oz. (1¾ cups) 28 g (425 ml) fresh parsley, finely chopped
  • 2 tbsp 2 tbsp olive oil
  • ½ ½ lemon, juicelemons, juice
  • 4 oz. 110 g cucumber, sliced

Lemon garlic dressing
  • ¾ cup 180 ml mayonnaise
  • 2 tbsp 2 tbsp water
  • ½ ½ lemon, juice and zestlemons, juice and zest
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • ½ tbsp ½ tbsp dried oregano
  • ½ tsp ½ tsp paprika powder
  • salt and ground black pepper to taste

Instructions

Chicken and marinade

  1. Combine the marinade ingredients in a mixing bowl or plastic bag. Add the chicken thighs and toss to fully coat.
  2. Cover or seal, and place in the fridge for at least 20 minutes or overnight for maximum flavor.
  3. Thread the chicken onto skewers (if using wooden skewers, soak in water for at least 30 minutes to prevent from catching on fire). Place skewers on a preheated grill or frying pan, over medium-high heat. Grill for about 10 minutes on each side or until cooked all the way through.
  4. Set aside to cool while preparing the salad and dressing. Once cooled, remove chicken from the skewers.

Salad with lemon garlic dressing

  1. Prepare the salad and put it in a big bowl, or on plates.
  2. In a medium-sized bowl, mix the dressing ingredients together until well combined. Season with salt and pepper, to taste.
  3. Top the salad with the chicken and lemon garlic mayo. Garnish with extra parsley, lemon wedges, and enjoy right away.

    Nice flavors, especially the lemon garlic dressing.

    tips: since I don't care for raw onion, I substituted radish. Still gives crunch and zing, and is lower in net carbs too. I also sprinkled Sumac spice on top for some extra smoky tanginess. Love Sumac!

    Also, if using a frying pan, why bother with skewers? I skipped them and was happy with the result.

    Thank you for the comment and suggestion! The skewers help brown the meat evenly and make for easier flipping. As you found out, they are optional!

    This meal was fantastic! The dressing was incredible and full of flavour, so good. I didnt skewer the meat either, just did in large "schnitzel" strips ( I used breast as couldnt get thighs) and grilled them. The salad was the perfect addition. This is now on weekly meal rotation by family demand :)

I didnt skewer the meat either, just did in large "schnitzel" strips ( I used breast as couldnt get thighs) and grilled them. The salad was the perfect addition. This is now on weekly meal rotation by family demand :)

    OMG! I made this for the first time and it was incredible! I didn't skewer the meat either, but I used skinless boneless chicken breast (I despise dark meat) and cut it up in bite sizes pieces. Cooked it in a frying pan until golden brown and put it on top of the salad. It was delicious! Next time I'll try it skewered. This is definitely a keeper recipe!

    This was really good! My husband is not a cold lettuce salad fan, so I put his chicken on top of butter fried cabbage with a little dressing. Not very Greek I guess, but that way we all enjoyed it. Thanks for giving us such tasty yet easily prepared options!

    Great recipe! I used thighs with bone (all I had) and ended up simmering it in the marinade. Then I poured off the grease/oil , deglazed the pan with a cup of water and thickened it with an egg yolk. It made a lovely gravy!

    Absolutely love this recipe, the chicken is delicious and the salad mix and dressing are divine, felt like I was eating a salad from a real restaurant! I've also started making the dressing (without water) as a dipping sauce for other recipes because it's soooo good and super easy to make!
