Ingredients

  • 1 oz. 28 g butter
  • 1 lb 450 g ground beef or ground turkey
  • 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
  • 7 oz. 200 g fresh green beans, trimmed and cut into 1" (1 1|2 cm) pieces
  • 5 oz. 140 g blue cheese
  • 1 cup 240 ml heavy whipping cream
  • 1 cup (4 oz.) 240 ml (110 g) shredded cheddar cheese
  • salt and pepper
Serving
  • 5 oz. (2½ cups) 140 g (600 ml) leafy greens

Instructions

  1. Preheat the oven to 400°F (200°C). Brown onion and meat in butter over medium-high heat until the meat is fully cooked through.
  2. Add the beans towards the end. Add crumbles of blue cheese and stir.
  3. Add the heavy whipping cream and bring to a simmer for 5-10 minutes until the sauce thickens. Season with salt and pepper to taste.
  4. Pour into a baking dish. Add shredded cheese on top. Bake in the oven for 15-20 minutes or until golden brown.
  5. Serve with leafy greens.

Tip!

Frozen or canned green beans work too. Just defrost and drain well before adding.

    My whole family enjoyed this recipe. However, we felt that there was a bit too much butter. Other than that, a delicious, low carb dinner for all!

    A workmate is wondering if you can swap the blue cheese for any other kind of cheese like feta or cream cheese if you are not partial to blue cheese.

    Feta would be a better sub for blue cheese since it is the same consistency.

    I always drain my beef as I use 85/15. If you use a leaner beef, you may not need to drain.
