Ingredients

  • 4 4 eggeggs
  • 2 tbsp 2 tbsp butter for frying
  • 8 oz. 225 g canned mackerel in tomato sauce
  • 2 oz. 60 g lettuce
  • ½ ½ red onionred onions
  • ¼ cup 60 ml olive oil
  • salt and pepper

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. Fry the eggs in butter, just the way you want them – sunny side up or over easy.
  2. Put lettuce, thin slices of red onion and mackerel on a plate together with the eggs. Season to taste with salt and pepper. Drizzle olive oil over the salad and serve.

    I've now gone back in eating mackerel in tomato sauce, easily my favourite way to eat oily fish. Ruddy lip smacking delicious

    I just ate this for breakfast and it was very delicious! I would never try mackerel together with fried eggs and veggies on my own but i'm glad i gave it a try since this combination is perfect. I love it!
