Roast beef with keto no-tato salad

Roast beef with keto no-tato salad

You will not believe how good this 2-minute no-tato salad is. Instead of potatoes, we use zucchini, which gives it the right consistency minus all the carbs. Serve with roast beef, smoked salmon, or rotisserie chicken.

This salad was so tasty! I was nervous about trading zucchini for potatoes but I really enjoyed it! Definitely a keeper.

So you don't cook the zucchini? Just wash and dice?

It was alright, I found it had too much dressing for me, so I will 1/2 it next time, also, when I make potato salad, it's the hard boiled eggs that give it the best taste, so I will try adding some of those also.

    That's correct!

I found it tasteless! Will add more dressing and herbs!

I agree there was just a bit too much dressing - Just use a slotted spoon. For additional flavor, add lemon zest. You could also substitute hard-boiled eggs for the roast beef and mix into the salad if desired. Chopped red onion also boosts the flavor, but would need to account for the additional carbs.

I was dubious about this recipe as you wouldn’t dream of eating raw potatoes in a potato salad.
I was correct, definitely the worst recipe I’ve done from DD. The courgette needs cooking first, maybe roasted would be best. The dressing was lovely but we couldn’t eat the finished dish. I may try it again but not raw.

This keto no-tato salad was a hit at our family picnic. Everyone loved it! It definitely rivals regular potato salad and it feels like a "treat". Great way to use up zucchini from the garden when there are too many at once.
