Ingredients

  • 2 tbsp 2 tbsp sour cream
  • 1 tbsp 1 tbsp mayonnaise
  • 1 tsp 1 tsp Dijon mustard
  • 2 tsp 2 tsp fresh chives or dried chives (save some for garnish)
  • 5 oz. 140 g zucchini, diced
  • 1½ oz. (623 tbsp) 45 g (110 ml) celery stalk, dicedcelery stalks, diced
  • salt and ground black pepper
  • 6 oz. 170 g deli roast beef

Instructions

Instructions are for 1 serving. Please modify as needed.

  1. Combine all the ingredients except for the roast beef in a bowl. Season with salt and pepper to taste.
  2. Serve the no-tato salad with the roast beef and sprinkle with chives to garnish.

Tip

If you have extra ingredients, like zucchini or celery, chop them up and freeze them for future recipes, such as soups, stews, or omelets.

    This salad was so tasty! I was nervous about trading zucchini for potatoes but I really enjoyed it! Definitely a keeper.

    It was alright, I found it had too much dressing for me, so I will 1/2 it next time, also, when I make potato salad, it's the hard boiled eggs that give it the best taste, so I will try adding some of those also.

    I agree there was just a bit too much dressing - Just use a slotted spoon. For additional flavor, add lemon zest. You could also substitute hard-boiled eggs for the roast beef and mix into the salad if desired. Chopped red onion also boosts the flavor, but would need to account for the additional carbs.

    I was dubious about this recipe as you wouldn’t dream of eating raw potatoes in a potato salad.
    I was correct, definitely the worst recipe I’ve done from DD. The courgette needs cooking first, maybe roasted would be best. The dressing was lovely but we couldn’t eat the finished dish. I may try it again but not raw.
