This perfect keto side dish can turn any veggie skeptic into a veggie fan. Serve these tasty bacon-wrapped asparagus spears with a juicy steak or chicken and a dollop of Parmesan butter for a complete low carb meal.

Ingredients

  • 1 tbsp 1 tbsp olive oil
  • 1 tbsp 1 tbsp balsamic vinegar
  • 12 oz. 350 g green asparagus, trimmed
  • 8 (8 oz.) 8 (220 g) bacon strips (turkey or pork)
  • ground black pepper

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat oven to 400°F (200°C) and prep a baking sheet with parchment paper.
  2. Whisk together olive oil and balsamic vinegar in a small bowl.
  3. Wrap one strip of bacon around each bundle of asparagus stems (about 3-4 each). Overlap the starting end of the bacon slightly to secure it. When done, place them on the baking sheet, seam-side down.
  4. Brush the asparagus bundles with the balsamic mix and season with black pepper.
  5. Bake for about 10-15 minutes or until the bacon is crispy and the asparagus is tender.
