Ingredients

  • 8 oz. 225 g cooked yellow beets
  • 2 oz. 60 g anchovies
  • ½ ½ red onionred onions
  • 1 cup 240 ml mayonnaise
  • 2 2 baby gem or endive lettuce
  • fresh chives

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Dice the cooked yellow beets, anchovies and onions finely.
  2. Mix with mayonnaise in a bowl.
  3. Garnish with finely chopped chives.
  4. Serve in baby gem or endive lettuce.

    Nice, but it does not fit into my "spring cleaning" diet I have been considering lately. No plants/fibers for at least a week. OK, maybe the regular 10-20 g of 90 % chocolate with my coffee twice daily. :)
