Ingredients

  • 1 (4 oz.) 1 (110 g) yellow onion, slicedyellow onions, sliced
  • 1 tbsp 1 tbsp coconut oil
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 2 tbsp 2 tbsp curry powder
  • 2 lbs 900 g ground beef or ground turkey
  • 1½ tsp 1½ tsp salt
  • ¾ cup 180 ml coconut cream
  • 4 oz. (323 cups) 110 g (850 ml) baby spinach

Instructions

  1. Peel and slice the onion into half-moons.
  2. Heat a large frying pan or wok over medium-high heat, add coconut oil. When hot, add the onion and fry until it's soft.
  3. Add the garlic and curry powder, stir and cook for another minute. Be careful not to burn the garlic.
  4. Add the ground beef, season with salt, and continue to stir until thoroughly cooked.
  5. Add the coconut cream and stir to combine.
  6. While the curried beef is still simmering in the pan, begin to add the spinach one handful at a time. Stir the spinach with the curried beef until it wilts. Repeat until all the spinach is added. Taste and add more salt if needed.
  7. Serve the keto curry in bowls, and enjoy!

Tips

Add more flavors by serving the curry with different toppings like fresh cilantro, scallions, chili, and fresh ginger. And why not serve it with a crispy fried egg on top?

    Good, easy dinner idea. We added fish sauce and that really knocked it out of the park. I cooked rice to serve to my non-keto household members and they enjoyed the combination.

    The nutrition information is based on the first listed ingredient. If you choose to use ground turkey instead, the protein would be slightly higher and the fat would be slightly lower.
