Ingredients

Vegetables
  • 1 lb 450 g cauliflower, coarsely chopped
  • 3½ oz. 100 g fresh green beans, trimmed
  • salt
  • 1 tbsp 1 tbsp olive oil
  • 2 tbsp 2 tbsp butter
  • 13 cup 80 ml heavy whipping cream
Lamb chops
  • 4 (1 lb) 4 (450 g) lamb choplamb chops
  • 4 tbsp 4 tbsp red curry paste
  • 2 tbsp 2 tbsp butter

Instructions

  1. Place the cauliflower pieces in a large cooking pot. Place the green beans next to the cauliflower. Add water until all the vegetables are submerged and season with a little salt.
  2. Add the olive oil to the pot. Put the pot over the heat and cook, uncovered, for about 7 minutes or until the veggies are tender.
  3. Meanwhile, rub the curry paste into the lamb chops, ensuring they are completely coated.
  4. Drain the water from the pot containing the vegetables, remove the beans with tongs, and set them aside.
  5. Return the cauliflower to the pot over low heat, add the cream and butter and blend to a thick pulp. Season with black pepper and salt.
  6. Fry the lamb chops for 1½ minutes on each side in plenty of butter or olive oil. Just before the lamb chops are cooked, add the beans to reheat them and let them soak up some of that delicious sauce.

    Can you advise why is this 15 grams of Carbs. The sum of all the elements doesn't seem to make up the total amount of carbs.

    Hi, Marty! The carbs here come from the cauliflower, green beans, heavy whipping cream, and red curry paste.

    I wondered the same thing. Then discovered the recipe calls for 1/2 lb of cauliflower! If you reduce that somewhat and eat only 1 8 oz lamb chop, substitute other seasons for the curry paste… well it’s a whole lot more doable. But not the same flavors, of course…. Curry paste alone is 3 carbs
