Ingredients

  • 1 tbsp 1 tbsp olive oil
  • ½ cup (2¾ oz.) 120 ml (80 g) red onion, dicedred onions, diced
  • 2 2 garlic clove, crushedgarlic cloves, crushed
  • 1 lb 450 g ground beef
  • 13 cup 80 ml red bell pepper, dicedred bell peppers, diced
  • 13 cup 80 ml green bell pepper, dicedgreen bell peppers, diced
  • 2 tsp 2 tsp ground cumin
  • 1 tsp 1 tsp chili powder
  • 2 tsp 2 tsp tomato paste
  • 1 cup (8½ oz.) 240 ml (240 g) canned whole tomatoes
  • 1 cup (4 oz.) 240 ml (110 g) shredded cheddar cheese
  • salt and pepper to taste
For serving
  • ½ cup 120 ml sour cream
  • 2 tsp 2 tsp fresh cilantro, chopped

Instructions

  1. Preheat the oven to 350° F (180° C).
  2. Fry the onion and garlic until soft, add the ground beef, and cook until all the meat has browned.
  3. Add the peppers, stir, and cook until soft
  4. Add the cumin, chili powder, tomato paste, tomatoes, salt, and pepper, and stir well.
  5. Place contents from the pan into a baking dish.
  6. Sprinkle the shredded cheese over evenly and cook in the oven for 20 minutes.
  7. Garnish individual servings with sour cream and a sprinkle of cilantro.

Tip!

To reduce dishes, you can also cook the beef and vegetables in an oven-safe skillet. When the beef is browned, simply top with cheese and place into the oven.
