- 1 cup (7½ oz.) 240 ml (210 g) cottage cheese
- 2½ oz. (5 tbsp) 70 g (70 ml) cream cheese
- ½ cup 120 ml heavy whipping cream
- 2 tbsp 2 tbsp cocoa powder
- 1½ oz. (51⁄3 tbsp) 45 g (80 ml) sugar-free dark chocolate
- 2 tbsp 2 tbsp powdered erythritol
- 1 tsp 1 tsp vanilla extract
- 1 pinch 1 pinch salt

Making low carb simple
Instructions
- Add the cottage cheese and cream cheese to a food processor or blender and blend for 1 minute.
- Scrape down the sides and blend for another minute, until completely smooth.
- Add the cocoa powder, erythritol, vanilla, and a pinch of salt, then blend until smooth.
- Melt the chocolate in the microwave in 30-second intervals until smooth, then let it stand for about 10 seconds.
- Add the melted chocolate to the cheese mixture and blend until smooth.
- Beat the heavy cream until soft peaks form.
- Gradually fold the chocolate-cheese mixture into the whipped cream until well incorporated.
- Divide between four serving glasses or pipe for a more elegant look, then chill for 1 hour before serving.
Recipe notes
If cottage cheese is very watery, drain briefly in a fine-mesh strainer before blending.
Melt chocolate gently and cool until lukewarm before adding — hot chocolate can loosen the cream.
Refrigerate 1–2 hours for the best texture.
