This creamy keto oven-bake curry is a great way to cook fish loaded with flavor and pizazz. Even better, it's quick and easy to make. It might just become a new weeknight favorite.

Ingredients

  • 1½ lbs 650 g salmon, boneless filletsalmon, boneless fillets or white fish fillet, in pieceswhite fish fillets, in pieces
  • salt
  • 2 tbsp 2 tbsp red curry paste or green curry paste
  • 2 cups 475 ml coconut milk
  • ½ cup (¼ oz.) 120 ml (8 g) fresh cilantro, chopped
  • 1 lb 450 g cauliflower or broccoli

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the fish pieces snuggly in a medium-sized baking dish. Salt generously.
  3. Mix coconut milk, curry paste, and chopped cilantro in a small bowl and pour over the fish. Bake in the oven for 20 minutes or until the fish is done.
  4. In the meantime, cut the cauliflower into small florets and boil in lightly salted water for a couple of minutes. Serve with the fish.

    After 10 weeks of keto I have lost 15lbs woohoo loving all the dishes

    For this weeks menus I decided it would a good idea to go back to the two week challenge recipes

    The first time I made this dish I used coconut milk not coconut cream as the cream seemed to be a solid mass ( i had never cooked with coconut cream before)

    It was a disappointment but yesterday I cooked it with coconut cream and it was delicious and now ticked as a favourite :-)

    Is the coconut cream supposed to be sweetened or unsweetened? I screwed up and used cream of coconut the first time and just realized it. 🤦🏻‍♀️

    I messed up I guess because the dish said low carb Keto and my meal is very sweet and the coconut cream says 18 carbs which I didn't look at when taking off the shelf.

    Amazing dish, but I guess I grabbed the sweetened cream

    I'm SO bummed! I didn't read the comments about the Coconut cream vs cream of coconut and I used the latter. I made it, saw that it was very runny, took one very sweet bite and looked at the can and saw 18gms carbs! Now two beautiful salmon filets and all the ingredients that went into making it are going down the garbage disposal! Please put a note in the recipe about this!

    Don't use creamed coconut! I especially went out to buy some - mine came in a packet and not in a can. It's not the same as coconut cream. sauce is really powdery and thick. I even added water to thin it out. I can see it would be tasty with the right type of coconut. You need to be clearer.

    Well Tanji why don’ you enlighten us 🤔I think I know what we all did wrong ....friend as you did and I did the mistake and since Tanji wasn’ t kind enough to tell us only shame us what we did wrong I will explain ....As so many made this mistake ....we thought that the refrigerating was only for the coconut cream to scope out the water ..I thought the further instructions about draining the water was only for the cream The directions were not very clear on that . I thought yes they gave us a substitute but didn’t clearly explain that the milk had to be drained of water also 😤. It had an awesome favor but more like a soup 🤣🤣

    We used a can of coconut milk, the sauce was a little thin but still had good flavor and once you roll your cauliflower around it in you won't be one bit disappointed.

    Thank you Scott, but I can't stand the taste of coconut. I can taste coconut water, milk, oil etc. in most foods. I notice that coconut is used in a lot of the recipes. I made the fish dish with heavy cream and it was good. I truly appreciate your response.

    I started Keto 25th June so just over 4 months I started at 208lbs I am down to 178lbs

    My wife needs to lose weight too but dosn't stick to less than 20g carbs a day she hasn't lost any weight

    I have no idea how to convince her to adopt Keto anymore perhaps she needs a real kick up her backside from someone hehe

    on Keto you don't need to count calories lots of information on the website as to why not but as an example 100calorie piece of fish vs 100 calorie bar of chocolate are they equal ? of course not

    Look in the Asian isle for the unsweetened coconut cream. The one by the drink mixers is sweetened and has a lot of sugar. The one in the Asian isle has 1g carb

    This recipe is outstanding. Great flavor! I suggest putting cauliflower florettes into pan and I also added sliced shiitake mushrooms. Baking w/ fish at 400 degrees came out perfectly cooked.

    This was a great dish! I put cauliflower in the casserole too, baked it for a bit longer, and added shredded mozzarella on top. It was yummy, easy and my boyfriend went for seconds! Saving it to my recipe book

    I made this with scallops. It was delicious. I made the sauce in a sauce pan, stirring until thick. Then I sautéed the scallops on butter. I poured the sauce over the scallops. My husband loved it

    We liked this. The sauce (made with coconut cream) was not thick, but it was delicious and mild. Not really a "coconutty" taste, or even a strong curry taste (I used store-bought green curry paste). We liked the piquant flavor of the cilantro. I used two large fillets of tilapia, and the two of us ate the whole dish. I think Jennifer (just above) has a good idea to stir the sauce separately until a bit thicker.

    Made this tonite using coconut milk chilled in the fridge then skimming the cream off. Oh my! Absolutely delicious!!! I used riced cauliflower with a little turmeric as a side - can’t miss with this recipe 😊

    Delicious! We tried this dish with salmon and found the two distinct flavors of the fish and the sauce competed with each other, diminishing the flavor of each. We tired the recipe with a mild white fish and it was spectacular! This is definitely a dish on repeat in our house!

    You might try it on the stovetop, covered at medium heat. Give it a stir every few minutes.

    Used salmon, cut it up into pieces as the ingredients list specified but then realised it was just meant to be two pieces of fish? Anyway tasted really good. I just put the whole tin of coconut cream in which was like 275ml instead of 225ml for the serving for 2 people. And I actually put half the jar of red curry paste. Was a good amount of spice. Will definitely make again sometime.

    I am new to keto and to Diet Doctor and this is the very first recipe I have tried. I did not use the oil nor the butter, did not see the point on top of the coconut cream and wow, such a flavorful dish! Served it with broccoli and rice for my non keto friends and it was a success all around; this recipe went straight to my favorites and no doubt I will cook it again and again! Bonus, it takes only 30 min from prep to the table. Very impressed and looking forward trying many more recipes! :)

    Loved the sauce! I would use salmon instead of white fish for this. I couldn't taste the fish. I used frozen Costco cauliflower and mixed it into the sauce and then poured it all over the fish and baked it together to eliminate the extra step of cooking the cauliflower separately.

But the direction about making coconut cream is still there in the notes, but not as part of the actual recipe. So is the intent that we should take two cups of coconut milk and make the cream?     The ingredients list and instructions both list coconut milk and not coconut cream. The comments overwhelmingly mention coconut cream and not coconut milk. Could you please clarify which is to be used in this recipe.
