We love that anything can be a burger — even shrimp! These high-satiety patties are reminiscent of a wonton filling, with bright notes of ginger and lime zest, finished off with a touch of garlic. They're light, airy, and served with a creamy yogurt sauce that offers a bit of heat. Eat them as they are, sandwiched between lettuce "buns," or make them minis and share them as an appetizer!

Ingredients

Shrimp burger
  • 1½ lbs 650 g shrimp, raw
  • 4 oz. 110 g zucchini
  • 2 (1 oz.) 2 (30 g) scallionscallions
  • 2 2 garlic clovegarlic cloves
  • 1 oz. (423 tbsp) 28 g (70 ml) fresh ginger, finely grated
  • 1 tsp 1 tsp lime zest
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp ground black pepper
Sauce
  • ½ cup (3 oz.) 120 ml (90 g) Greek yogurt (0% fat)
  • 2 tbsp 2 tbsp mayonnaise
  • ½ ½ lime, zest and juicelimes, zest and juice
  • 1 tsp 1 tsp hot sauce, or more to taste
  • salt or and ground black pepper to taste
To serve
  • ½ (½ oz.) ½ (14 g) Romaine lettuce, 1 leaf per burger

Instructions

Instructions are for 4 servings. Please modify as needed.

Shrimp burger

  1. Roughly chop the shrimp, zucchini, scallions, and garlic cloves and add them to a food processor.
  2. Pulse until the mixture is finely ground and starts to stick together.
  3. Add the grated ginger, lime zest, salt, and black pepper and pulse again briefly to combine.
  4. Add the oil to a non-stick pan over medium heat. Use a 1/2-cup measure (or small cup with a volume of around 120ml) to form mounds and drop them straight into the hot pan. Use a spatula to flatten them to at least 3/4-inch (2cm) thick, and shape them into rounds. You may need to fry them in a few batches.
  5. Cook the patties for 5-6 minutes until the underside is golden. Flip carefully and repeat on the other side for about 4 minutes, until pink in the middle.
  6. Sauce

  7. While the burgers are cooking, make the sauce. Stir together the Greek yogurt, mayonnaise, lime zest, lime juice, and hot sauce. Taste and add salt and black pepper if needed. Cover and chill in the refrigerator until ready to serve.
  8. Serve each shrimp burger between lettuce leaves with a dollop of sauce.

    Ingredients sounded great. More finely chopped these and ended up like potato pancakes. Cooked in skillet but still tasted great. Will do these again!
