Roasted lemon garlic chicken with whipped feta
Ingredients
- 2 lbs 900 g boneless chicken thighs
- 1 lb 450 g zucchini half-moons 1/4 inch
- 4 tbsp 4 tbsp olive oil
- 1 1 lemon zest and juicelemons zest and juice
- 4 4 garlic clove mincedgarlic cloves minced
- 1 tsp 1 tsp dried oregano
- 1 tsp 1 tsp paprika powder
- 1 tsp 1 tsp salt
- ½ tsp ½ tsp ground black pepper
- 6 oz. (1¼ cups) 170 g (270 ml) feta cheese
- ½ cup (3 oz.) 120 ml (90 g) Greek yogurt (4% fat)
- 1 tbsp 1 tbsp lemon juice
- 1 tbsp 1 tbsp olive oil
- 1 1 garlic clovegarlic cloves
- ground black pepper to taste
- fresh parsley (optional)
Instructions
- Let the feta come to room temperature for 20 minutes. Preheat the oven to 425°F (220°C).
- Toss the chicken thighs and zucchini with the olive oil, lemon zest and juice, garlic, oregano, paprika, salt, and black pepper.
- Spread on a sheet pan and roast 25–30 minutes, until the thickest part of the chicken reaches 165°F (74°C) and the zucchini is golden.
- Blend the feta with the Greek yogurt, lemon juice, olive oil, garlic, and black pepper until whipped and creamy.
- Rest the chicken a few minutes. Serve with the whipped feta and parsley.
Can I make this chicken in the air fryer?
Yes. For the best results, cook the chicken and zucchini separately so they can brown without overcrowding the air fryer. Air-fry the chicken thighs at 400°F (200°C) for 15–18 minutes, turning halfway through, until golden and the thickest part reaches 165°F (74°C).
