Ingredients

Chicken
  • 2 lbs 900 g boneless chicken thighs
  • 1 lb 450 g zucchini half-moons 1/4 inch
  • 4 tbsp 4 tbsp olive oil
  • 1 1 lemon zest and juicelemons zest and juice
  • 4 4 garlic clove mincedgarlic cloves minced
  • 1 tsp 1 tsp dried oregano
  • 1 tsp 1 tsp paprika powder
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
Whipped feta
  • 6 oz. (1¼ cups) 170 g (270 ml) feta cheese
  • ½ cup (3 oz.) 120 ml (90 g) Greek yogurt (4% fat)
  • 1 tbsp 1 tbsp lemon juice
  • 1 tbsp 1 tbsp olive oil
  • 1 1 garlic clovegarlic cloves
  • ground black pepper to taste
For serving
  • fresh parsley (optional)

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Let the feta come to room temperature for 20 minutes. Preheat the oven to 425°F (220°C).
  2. Toss the chicken thighs and zucchini with the olive oil, lemon zest and juice, garlic, oregano, paprika, salt, and black pepper.
  3. Spread on a sheet pan and roast 25–30 minutes, until the thickest part of the chicken reaches 165°F (74°C) and the zucchini is golden.
  4. Blend the feta with the Greek yogurt, lemon juice, olive oil, garlic, and black pepper until whipped and creamy.
  5. Rest the chicken a few minutes. Serve with the whipped feta and parsley.
