Ingredients

Parsley butter
  • 4 oz. 110 g butter
  • 1 tbsp 1 tbsp fresh parsley, chopped
  • 1 pinch 1 pinch ground black pepper
  • 1 pinch 1 pinch salt
Dumplings
  • 1 lb 450 g ground chicken
  • 1 1 large egg, beatenlarge eggs, beaten
  • 3 tbsp 3 tbsp fresh parsley, chopped
  • 1 tsp 1 tsp onion powder
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp ground nutmeg
Soup
  • 2 oz. 55 g butter
  • 1 lb 450 g green cabbage, cored and coarsely chopped
  • 6 cups 1.4 liters chicken broth
  • ½ tsp ½ tsp salt
  • ½ tsp ½ tsp ground black pepper
This recipe has been added to the shopping list.

Instructions

  1. Mix the ingredients for the parsley butter until combined, and set aside.
  2. In a medium sized bowl, mix the dumpling ingredients until well combined. Place in the fridge for at least 10 minutes. Once chilled, form the mixture into 1 inch (2,5 cm) balls, using wet hands. You will have approximately 16 dumplings.
  3. In a large pot, melt the butter over low heat. Add the cabbage and increase the temperature to medium, stirring until the cabbage is slightly tender and starts to turn golden brown. Add the chicken broth to the pot and bring to a boil over high heat and then reduce the heat to medium.
  4. Add the dumplings, one at a time. Simmer for 8-10 minutes or until the dumplings are thoroughly cooked. Flip the dumplings about 5 minutes after adding them so they cook evenly. Season with salt and pepper to taste.
  5. Serve bowl of soup with a dollop of parsley butter.

    Not sure how to express how much we love this soup. I always cook for the team (I run a small business) and this was on today's menu. It's always a good sign when they go back for more. Then I did left overs for the kids for tea tonight. My daughter (12 years) is hassling me to make sure I leave some so she can take it to school tomorrow for lunch. Absolute hit, we give it 5 stars. Only adjustment I would make is to add more stock as in the end there are more quenelles than soup.

    Umm didn't care for this. Not filling enough for a meal and also rather bland. Also I never ever cook cabbage and now I see why. Definitely prefer it raw in the keto slaw. This is one of the few Diet Doctor recipes I don't like.

    So delicious! I did add tumeric, garlic and cayenne to the meatballs (because if you can add some super herbs why not) and it was amazing! Even my hubby who doesn't like ground meat had multiple helpings. Need to make a double batch next time!!

    Love this one it's nice and filling and not too heavy, great for dinner if you want something light. I added a lot more cabbage to bulk it out a bit more.

    I add some garlic, rice wine vinegar, soy sauce, and ginger to this to make it more like wonton soup. Amazing!

    I add mushrooms and onions to the stock as well as ginger and soy. To the meatballs I add ginger and a little sriracha. Occasionally I will also use half a pound of ground sausage to the chicken! 😋 The starting recipe is a great base to start with. For those who think it’s too bland, I encourage you to try again and add the flavors you like and make it your own. The possibilities are limitless.

    I was wanting chicken and dumplings when I came across this recipe. Didn't have the cabbage so I ended up making a thick creamy soup with cream cheese, heavy whipping cream some butter and a dollop of sour cream, and water.. delish!

    Made this as written, except I used a small scooper for the dumplings. I scooped and dropped directly into the soup - very easy. This was very good and we will make it again. Thanks for another delicious recipe.

    Made this last night with a few adjustments and it was AMAZING!!! I substituted all the parsley in the recipe with fresh cilantro...AMAZING. I have been saving my strained bacon grease in the fridge, I used a good heaping spoonful in place of the butter when cooking the cabbage...can I say amazing!
    Lastly I used approximately 2 T of chicken bullion in place of the salt and pepper in the broth, it made the broth nicely salty and more flavorful. Like Amy I used a scoop for the dumplings and it was a snap. This recipe is definately going onto the regular menu!!!
