Ingredients

Tonnato sauce
  • 2 tbsp 2 tbsp small capers
  • 4 oz. 110 g tuna in olive oil
  • 2 2 garlic clovegarlic cloves
  • ¼ cup (13 oz.) 60 ml (11 g) chopped fresh basil
  • 1 tsp 1 tsp dried parsley
  • 2 tbsp 2 tbsp lemon juice
  • ½ cup 120 ml mayonnaise
  • ¼ cup 60 ml olive oil
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp ground black pepper
Chicken
  • 1¼ lbs 550 g chicken breastchicken breasts
  • water
  • 1 tsp 1 tsp salt
  • 7 oz. (3½ cups) 200 g (850 ml) leafy greens
  • capers and lemon, wedgeslemons, wedges (optional)

Instructions

  1. Mix all the ingredients for the sauce with an immersion blender or in a food processor. Reserve the tonnato sauce in order to let the flavors develop.
  2. Put the chicken breasts in a pot with just enough lightly salted water to cover it. (If you’re using pre-cooked chicken then skip this step.) Bring the water to a boil and discard the foam appearing on the surface.
  3. Let simmer on medium heat for about 15 minutes or until the chicken is fully cooked through. If you’re using a meat thermometer, it should say 165°F (75°C) when done.
  4. Allow the chicken breasts to rest for at least 10 minutes before slicing.
  5. Place leafy greens on serving plates and place sliced chicken on top. Pour the sauce over the chicken and serve with extra capers and a wedge of fresh lemon.

Tips

If you use a can of tuna in good quality olive oil, you can use the entire contents of the can in your sauce and you probably won’t need to add any additional oil.

You can also use precooked turkey in place of the chicken.

    Excellent!! I was able to find a high-quality wild caught tuna in olive oil, and I added the whole 6.7oz jar, but I had to use the extra olive oil in the recipe to give it a more fluid consistency. I also used my leftover roasted chicken from another of the recipes here. So delicious!!

    you forgot the best ingredient; 2 teaspoons of anchovy paste. And the hot sauce. This sort of dish needs a bang-up sauce, and these give it!

    Andy, I would think it means that you pust put it in the fridge, or let it sit on the counter, until the chicken is done. I am making the tuna sauce right now ahead of time, and will just leave it in the fridge

    Yes, "reserve" means to set to the side.

    This was surprisingly good. Surprising because we never had tuna and chicken together before. But we will def make it again. The only thing I changed was that I cut the cooked and cold chicken breast into smaller pieces and mixed it with the Tonnato Sauce making it into a chicken salad. Yum!

    We have made this dish many times now and still make it into a chicken salad after the chicken has cooled down, of course. Today we had a little leftover bacon crumble so we added that and it didn't hurt the dish one bit :-)

    Hi, Amy! It should be fine for about 5 days in the fridge in a sealed container.
