Viral keto beef doner kebab with garlic sauce
Ingredients
- 1½ lbs 650 g ground beef or ground lamb
- 1 (4 oz.) 1 (110 g) yellow onion, finely gratedyellow onions, finely grated
- 1 tbsp 1 tbsp dried parsley
- 2 tsp 2 tsp paprika powder
- 1 tsp 1 tsp ground cumin
- ½ tsp ½ tsp chili flakes
- ½ tsp ½ tsp chili powder
- 1 tsp 1 tsp garlic powder
- 1 tsp 1 tsp salt
- ½ tsp ½ tsp ground black pepper
- ½ cup 120 ml mayonnaise
- ½ cup (3 oz.) 120 ml (90 g) Greek yogurt (4% fat)
- 1 1 garlic clove, mincedgarlic cloves, minced
- 1 tsp 1 tsp lemon juice
- ¼ tsp ¼ tsp salt
- ground black pepper to taste
- 3 cups (3¾ oz.) 700 ml (110 g) lettuce or mixed salad greens
- 1 cup 240 ml thinly sliced cucumber
- ½ cup (2¾ oz.) 120 ml (80 g) thinly sliced red onionthinly sliced red onions
- 2 tbsp 2 tbsp fresh fresh parsley (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Combine the ground beef, finely grated onion, dried parsley, paprika, cumin, chili flakes, chili powder, garlic powder, salt, and black pepper. Knead for 2–3 minutes, until the mixture is smooth, cohesive, and slightly sticky.
- Divide the meat mixture into 2 equal portions. Place one portion between two sheets of parchment paper and roll into a very thin, even rectangle. Remove the top sheet and, using the bottom parchment to help you, tightly roll the meat into a compact log. Repeat with the remaining mixture.
- Place the parchment-wrapped logs seam-side down on a baking sheet and bake for about 20 minutes, or until the beef is cooked through.
- Carefully unwrap the logs and let them cool slightly. Slice or tear the meat into thin pieces, then spread them in a single layer on a baking sheet. Broil for about 2 minutes, until browned and crispy around the edges. Alternatively, sear the pieces in a hot skillet over medium-high heat. Avoid overcrowding so the meat browns rather than steams.
- Meanwhile, combine the mayonnaise, yoghurt, garlic, lemon juice, salt, and black pepper in a small bowl to make the garlic sauce.
- Divide the lettuce, cucumber, and red onion between four plates or bowls. Top with the crispy beef doner, garlic sauce, and fresh parsley, if using.
What type of ground beef works best for homemade döner?
Use ground beef with around 20% fat (80% lean). The extra fat helps keep the thin döner meat juicy and flavorful as it cooks and crisps.
What if I don't have a food processor?
Finely grate the onion using a box grater, then press it through a fine-mesh sieve to extract the juice. You need about ¼ cup (60 ml) onion juice for the recipe.
