Spicy keto beef stew with fried cauli rice

Ingredients

Spicy minute-steak
  • 1½ lbs 650 g minute steakminute steaks or chicken breast, sliced into 0.5" (1 cm) stripschicken breasts, sliced into 0.5" (1 cm) strips
  • 2 tbsp 2 tbsp butter
  • ½ tsp ½ tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 1½ tbsp 1½ tbsp curry powder
  • 2 tsp 2 tsp sambal oelek
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 2 tbsp 2 tbsp tamari soy sauce
  • 1¼ cups 300 ml heavy whipping cream
Fried cauli rice
  • 1 lb 450 g cauliflower
  • 2 tbsp 2 tbsp butter, for frying
  • ½ tsp ½ tsp salt
Serving
  • 2 tbsp 2 tbsp fresh parsley (optional)

Instructions

  1. Heat a large frying pan over medium-high heat. When hot add butter and let it melt before sautéing the steak for a few minutes. Season with salt and pepper to taste.
  2. Add curry powder, sambal oelek, garlic, soy sauce and heavy whipping cream. Simmer over medium heat for 10–12 minutes.
  3. Using a grater or grater attachment on a food processor, shred the cauliflower. Or if you prefer your cauliflower rice chunkier, chop it with a knife.
  4. To fry the cauliflower, melt butter in another large frying pan over medium high heat. Add the cauliflower and cook for 5-10 minutes or until it has softened a bit. Add salt to taste.
  5. Serve the spicy steak stew over the cauliflower rice. Garnish with some parsley.

    I made this last night using my pressure cooker (Ninja Foodi). I cooked the beef and all ingredients except the cream, adding 200 ml water for 25 mins on high followed by 10 mins natural release. I then added a bag of frozen oriental veg, cooked off the excess liquid and stirred in the cream. The veg took the carb count up by 5 g per person but then again we didn't have the cauli rice so it may be less than 5 g difference. It was a fantastic one pot meal that we will be having again and again.
