Ingredients

  • 4 oz. 110 g bacon
  • 8 8 large egglarge eggs
  • 1 cup (7½ oz.) 240 ml (210 g) cottage cheese
  • ½ cup (2 oz.) 120 ml (55 g) shredded cheddar cheese
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp ground black pepper
  • 1 (½ oz.) 1 (15 g) scallion slicedscallions sliced (optional)

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 325°F (165°C).
  2. Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and let cool slightly, then chop or crumble into small pieces.
  3. Add the eggs, cottage cheese, salt, and black pepper to a blender. Blend on medium speed for about 1 minute, or until completely smooth.
  4. Stir in the cheddar cheese and most of the bacon, reserving a little bacon for the tops.
  5. If using a 12-hole silicone muffin pan or silicone liners, there is no need to grease them. If using a metal muffin pan, grease it well with melted butter.
  6. Divide the mixture evenly between the cups, filling each about three-quarters full. Sprinkle the reserved bacon on top.
  7. Bake for about 22 minutes, or until the centers are just set. If using a metal muffin pan, start checking the egg bites around the 20-minute mark to avoid overbaking.
  8. Let the egg bites rest in the pan for about 5 minutes before removing. Garnish with sliced spring onions and serve.

How do you make cottage cheese egg bites creamy and fluffy?

For the creamiest, most tender texture, use full-fat cottage cheese and blend the egg mixture until completely smooth. Freshly shredded cheddar also melts more evenly than pre-shredded cheese. Avoid overbaking the egg bites. Remove them from the oven as soon as the centers are just set, as they will continue to cook slightly as they cool.

Cooking time may vary depending on the size of the egg bites and your air fryer, so start checking them around the 10-minute mark.
