Low-carb Italian zucchini wraps
Ingredients
- 1½ lbs 650 g zucchini thinly sliced into rounds
- 2 tbsp 2 tbsp olive oil
- ¼ tsp ¼ tsp salt
- 1⁄8 tsp 1⁄8 tsp ground black pepper freshly ground black pepper
- 6 oz. (1½ cups) 170 g (350 ml) mozzarella cheese
- 2 (8 oz.) 2 (230 g) tomato thinly slicedtomatoes thinly sliced
- 8 oz. (2 cups) 230 g (475 ml) fresh mozzarella cheese sliced
- 8 oz. 230 g prosciutto or deli turkey
- 2 oz. (2¾ cups) 55 g (650 ml) arugula lettuce

Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Using a mandoline or sharp knife, slice the zucchini into thin, even rounds. Arrange the slices in well-overlapping rows to form equal rectangular bases, one per serving. Make sure the slices overlap generously so the wraps hold together after baking.
- Drizzle the zucchini with olive oil and season lightly with salt and black pepper. Sprinkle the shredded mozzarella evenly over the zucchini.
- Bake until the zucchini is tender and the mozzarella is melted and golden. Let cool until the bases are firm enough to lift and fold without tearing.
- Top each zucchini base with tomato, fresh mozzarella, prosciutto, and arugula. Drizzle with the remaining olive oil.
- Carefully fold each zucchini wrap over the filling and serve.
Can I add pesto?
Absolutely. Spread a thin layer of pesto over each zucchini wrap before adding the filling. Choose a pesto without added sugar if you're following a strict low-carb or keto diet.
Can I use another deli meat?
Yes. Turkey, chicken, salami, or another thinly sliced deli meat works well in place of prosciutto. Check the label for added sugar and starches when choosing deli meat.
Can I make the zucchini wraps ahead?
Yes. Bake the zucchini and mozzarella bases ahead of time and refrigerate them separately from the filling. Assemble shortly before serving to keep the wraps from becoming soggy.
What other fillings can I use?
