Low-carb pumpkin recipes

Fall is here and that means it’s pumpkin season! Pumpkins, or winter squash, come in many colors, shapes and sizes. With 4-6% of carbohydrates it’s a great seasonal addition to the low-carb kitchen.

So, instead of just carving a jack o’lantern this year, use the entire thing. Even the pumpkin seeds, also known as pepitas, can be roasted, seasoned and eaten as a snack.

Below, you’ll find our best pumpkin recipes. We hope you will love them as much as we do and that they will add warmth and flavor to your fall cooking.

Some brands of psyllium husk turns purple with baking. I usually try to read the reviews before buying it online to make sure it won’t turn purple.
