High protein spinach club wrap
Ingredients
- 4 4 large egglarge eggs
- 8 oz. (2 cups) 230 g (475 ml) mozzarella cheese shredded
- 1 oz. (1 cup) 28 g (220 ml) fresh spinach
- ½ tsp ½ tsp salt
- ¼ tsp ¼ tsp ground black pepper
- 4 oz. 110 g bacon
- 12 oz. 350 g deli turkey
- 6 oz. (1½ cups) 170 g (350 ml) sliced cheddar cheese
- 4 tbsp 4 tbsp mayonnaise
- 1 tbsp 1 tbsp Dijon mustard
- 2 cups 475 ml iceberg lettuce shredded

Instructions
- Preheat the oven to 400°F (200°C).
- Add the eggs, mozzarella, spinach, salt, and pepper to a blender and blend until smooth.
- Line a large baking sheet with parchment paper. Pour the mixture onto the parchment and spread into a thin, even rectangle, about 1/8 inch (3–4 mm) thick.
- Bake for 10–12 minutes, or until set and lightly golden around the edges. Let cool for a few minutes, then carefully peel the wrap away from the parchment.
- Meanwhile, cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and let cool slightly.
- Mix the mayonnaise and mustard in a small bowl and spread evenly over the spinach wrap. Top with the turkey, cheddar, bacon, and lettuce, leaving a small border around the edges.
- Using the parchment to help you, roll the wrap up tightly. Place seam-side down and let rest for a minute before slicing into portions.
Can I skip the bacon?
Yes. Leave out the bacon and add some extra turkey, or chicken instead.
Make it ahead
The spinach wrap can be made ahead and stored covered in the refrigerator. For the best texture, add the filling shortly before serving so the lettuce stays crisp.
Add more club sandwich flavor
Add sliced tomato or avocado for a classic club-inspired twist. If you're preparing the wrap ahead, add the tomato just before serving to prevent the wrap from becoming soggy.
