Ingredients

Beef
  • 1¾ lbs 800 g sirloin steaksirloin steaks or flank steak
  • 1 tbsp 1 tbsp olive oil
  • 2 tsp 2 tsp ground cumin
  • 2 tsp 2 tsp smoked paprika powder
  • 1 tsp 1 tsp chili powder
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp onion powder
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp ground black pepper
  • 2 tbsp 2 tbsp lime juice
Vegetables
  • 2 (8 oz.) 2 (240 g) red bell pepper large, slicedred bell peppers large, sliced
  • 1 (4 oz.) 1 (110 g) yellow onion medium, slicedyellow onions medium, sliced
  • 1 tbsp 1 tbsp olive oil
  • salt to taste
Lime cauliflower rice
  • 1¼ lbs 550 g cauliflower rice 20 oz
  • 1 tbsp 1 tbsp olive oil
  • 1 1 lime zest and juicelimes zest and juice
  • ¼ cup (18 oz.) 60 ml (4 g) fresh cilantro
  • salt to taste
Lime chipotle mayo
  • ½ cup 120 ml mayonnaise
  • ½ tsp ½ tsp chipotle powder ground
  • 1½ tbsp 1½ tbsp lime juice
  • ½ tsp ½ tsp lime zest
  • salt to taste
For serving
  • 2 (14 oz.) 2 (400 g) avocadoavocados
  • fresh cilantro (optional)
  • lime wedgeslimes wedges (optional)

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Rub the steak with the olive oil, cumin, smoked paprika, chili powder, garlic powder, onion powder, salt, and black pepper.
  2. Sear in a hot skillet to your preferred doneness. Finish with the lime juice and rest 5–7 minutes.
  3. In the same pan, cook the sliced bell peppers and onion in olive oil until tender-crisp. Season with salt.
  4. Cook the cauliflower rice in olive oil until just tender. Stir in the lime zest and juice and the cilantro. Season with salt.
  5. Mix the mayonnaise, ground chipotle, lime juice, lime zest, and salt.
  6. Slice the steak across the grain. Divide the cauliflower rice between bowls and top with the peppers, onion, steak, avocado, cilantro, lime wedges, and chipotle mayo.

Are beef fajita bowls good for meal prep?

Yes. These low-carb fajita bowls are great for meal prep. Store the steak, fajita vegetables, and cauliflower rice in airtight containers in the refrigerator for up to 3–4 days. Keep the avocado, lime chipotle mayo, and garnishes separate and add them after reheating. Meal prep: fridge 3–4 days. Keep mayo and avocado separate. Any quick-cooking steak works (rump, sirloin, flank).

Can I use a different cut of beef for fajita bowls?

Yes. Rump steak works well, but flank steak, skirt steak, or sirloin are also good choices for beef fajitas. Whichever cut you choose, slice the cooked steak across the grain for more tender pieces.

Can I use frozen cauliflower rice?

Yes. Fresh or frozen cauliflower rice works well. If using frozen cauliflower rice, cook it directly from frozen and allow any excess moisture to evaporate in the skillet so the cauliflower rice doesn't become watery.

Can I make beef fajitas in the air fryer?

Yes. You can air-fry the steak and vegetables, although cooking times will depend on the cut and thickness of the steak. For the best browning, avoid overcrowding the air fryer basket and cook the vegetables separately from the steak.

What can I use instead of cauliflower rice?

For another low-carb option, serve the beef fajitas over shredded lettuce or cabbage. You can also skip the cauliflower rice and turn the recipe into a fajita salad.
