Broccoli is a wonderful vegetable and one of the most popular in the low-carb or keto kitchen. With about 4 percent carbohydrates, it can substitute for rice, pasta and potatoes in a number of ways.

    Tomatoes can be eaten, while keeping an eye on carb count as they can add up quickly. Tofu/soy is not a great option as it can be a hormone disruptor.
