    I never liked traditional flour based cake, this one looks so much better. Melon on the inside I presume. I will take that anyday over traditional! Looks delicious.

    Thank you Andreas for this. I've made 3 of them now. My grandson's comment when he saw the first one was "Wow, Grandma!". He, his father and grandfather ate the whole thing over morning tea and lunch. It was a big melon too!

    I adapted a cheesecake recipe to be low carb: sausage cake! I blend 250g cream cheese, 3 eggs, and a splash of cream. I cover the bottom of a small cake tin with grated Parmesan cheese and sliced sausage, then scoop the cream cheese mixture on top. I bake it on gas mark 5 for about 20 minutes (or until it's solid around the edges but still a little wobbly in the center). You can eat it then and there if you like, but I like to cool it to room temp, at least. In our house, it serves 4.
