Here's a wonderful, low carb, peanut butter sauce recipe also known as satay sauce. It's very popular with kids because of the creamy sweetness of coconut milk, and it's delicious with Thai food.

Here's a wonderful, low carb, peanut butter sauce recipe also known as satay sauce. It's very popular with kids because of the creamy sweetness of coconut milk, and it's delicious with Thai food.

Ingredients

  • 1¾ cups 425 ml coconut milk
  • 2 tsp 2 tsp red curry paste
  • 1 1 garlic clove, mincedgarlic cloves, minced
  • 1 tbsp 1 tbsp tamari soy sauce or fish sauce
  • 13 cup 80 ml peanut butter, without added sugar

Instructions

Instructions are for 6 servings. Please modify as needed.

  1. Combine all the ingredients in a small saucepan until smooth. Bring to a boil. Let simmer on low heat for 5–10 minutes until the sauce is of desired consistency.
  2. Taste and add more soy sauce if you think it needs more salt.

Is your peanut butter sugar-free?

Most branded peanut butters contain around 2 grams of sugar (half a teaspoon) per serving, so make sure to check the label. Ideally, your peanut butter should contain nothing but peanuts and sometimes salt.

Don't be put off by peanut butter with a little layer of oil at the top of the jar. That means it's natural. Just stir it into the peanut butter.

    It is even easier and tastier to buy peanuts, and grind them in a food processor, to create your own peanut butter. No sugar, no salt. Just peanuts, and a teaspoon of arachide oil.

    For those who want a true Thai flavor, replace the soy sauce with a much smaller amount of fish sauce (to taste). Thai recipes do not use soy sauce to make their dishes salty ;)

    This is delicious. I added an extra spoonful of peanut butter to thicken as I had used coconut milk.

    Sauces like this will generally keep safely in the fridge for at least 4-5 days.

    Peanut sauce is generally sweet. I use unsweetened peanut butter and was wondering if I could use a bit of Splenda in it to fill in the sweetness, when I make peanut sauce? Is Splenda allowed on the KETO diet? Thank you, marci

    Thirty years ago I lost 50 lbs on the Atkins diet in two weeks, then I joined WW and reached my goal weight. I'm glad now we have the KETO diet, which I have been on for 5 days and have already lost 4 lbs. I do take a water pill and high blood pressure medicine for heart disease. Will these medication effect my weight loss? Thanks, Marci
