Ingredients

Salmon
  • 1½ lbs 650 g salmon, boneless fillet, portionedsalmon, boneless fillets, portioned
  • 2 tbsp 2 tbsp tandoori seasoning
  • ½ tsp ½ tsp salt
  • 2 tbsp 2 tbsp olive oil or melted coconut oil
Cucumber sauce
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • ½ ½ lime, juice onlylimes, juice only
  • ½ (513 oz.) ½ (150 g) cucumber, shredded
  • ¾ cup (4¾ oz.) 180 ml (140 g) Greek yogurt (4% fat)
  • ½ tsp ½ tsp salt
Crispy salad
  • 1 (5 oz.) 1 (140 g) yellow bell pepper, slicedyellow bell peppers, sliced
  • 3 (1½ oz.) 3 (45 g) scallion, finely choppedscallions, finely chopped
  • 2 (14 oz.) 2 (400 g) avocado, cubedavocados, cubed
  • 5 oz. (3 cups) 140 g (700 ml) Romaine lettuce, chopped
  • ½ ½ lime, juice onlylimes, juice only

Instructions

  1. Heat the oven to 350°F (175°C).
  2. Place the salmon in a baking dish. Mix the tandoori seasoning and salt with the oil in a small bowl and brush it over the salmon. Bake in the oven for 15–20 minutes or until the salmon flakes easily with a fork.
  3. Mix the garlic, lime juice, shredded cucumber (squeeze out some of the water from the cucumber if you want a thicker sauce), and yogurt in a bowl. Taste for seasoning and add salt if needed.
  4. For the salad, chop the vegetables. Combine with lettuce in a serving bowl. Drizzle with lime juice.
  5. Serve the salmon with the salad and top with cucumber sauce.

Tip!

Ready for some DIY? You can make your own tandoori seasoning with the spices that you already have on hand. Start with equal parts ground ginger, ground coriander, cumin, turmeric, paprika, salt, and cayenne. Adjust the flavors to your liking. For even more warmth, try a dash of nutmeg, cloves, or cinnamon.

    Salmon, chicken and pork all have 0g carbs (well, a trace) so it won't affect the carb count of the meal.

    I made this with 5oz boneless chicken breast and one boiled egg per serving. Turned out very yummy. Does that change the macros substantially?

    They do Rene - I have done the 2 weeks and every single recipe was delicious. Some seemed a bit strange when I read the recipes, but were really fab when I made them. Keto pizza is particularly good. Try them all & you won't be disappointed.

    it's just the way the website works. you can switch it to 2 meals, and follow the ingredients to the left, the recipe to the right (this one is hard to screw up).

I would assume two servings since it in on the menu for lunch the next day, but can't understand why 4 servings. Is this a mistake or can you clarify?

    The "Instructions" clarify that they're for 4 people because some of our recipes specify baking dish size, oven temp and/or time. In many cases, if you make more or less, you will need to choose the appropriate size dish to bake it in. All of the recipes have the option to set the number of servings above the list of ingredients. If you're cooking for one person and need 1 dinner + 1 lunch, you will want to set that to 2 servings.

    This was delicious! I didn’t have tandoori seasoning so used masala and added a bunch of paprika, a little cumin and a little curry. Almost subbed out the sour cream for yogurt but so glad I didn’t!

    Just made this....my hubbie and I both thought it was delicious! Tried to follow the recipe as closely as possible, and it was worth it, all the flavours complimented each other. Cooked some cauli to go with it but wasn't essential, as there was a large, satisfying plateful.
    Just one comment, in the method it refers to arugula (which i had to Google as it is called rocket in the UK) but in the ingredients it says Romaine lettuce. I bought Romaine so that's what I used. Rocket might have been too much flavour?

    Made this the other night exactly has the recipe and it was the best salmon I ever had! I didn't have tandoori spice, so I googled and made mine own. I would pay a lot of money in an expensive restaurant for this meal! It is a keeper recipe!

    The avocado adds fat and a bit of carbs to the meal along with a different texture. You might try pecans or goat cheese.
