Stuffed low-carb cabbage casserole
Ingredients
- 1½ lbs 650 g green cabbage, finely shredded
- 5 oz. 140 g butter
- 1 lb 450 g ground beef
- 1 tsp 1 tsp salt
- 1 tsp 1 tsp onion powder
- ¼ tsp ¼ tsp ground black pepper
- 2 tbsp 2 tbsp Tex-Mex seasoning
- 1 tbsp 1 tbsp white wine vinegar
- 2½ cups (10 oz.) 600 ml (290 g) cheddar cheese, shredded
- 5 oz. (2½ cups) 140 g (600 ml) leafy greens or lettuce
Per serving
Instructions
- Preheat oven to 400°F (200°C).
- Fry the cabbage in a little more than half of the butter in a large frying pan or a wok over medium-high heat. Fry until soft, but don't let the cabbage turn brown. This can take a little while; roughly 10 minutes.
- Add spices and vinegar. Stir and continue to fry for a couple of minutes. Set aside on a plate.
- Melt the rest of the butter in the same pan. Sauté the ground beef and fry on medium-high heat until most of the juices have evaporated. Lower the heat to medium-low.
- Add cooked cabbage and sauté together with the beef for a minute. Remove from heat and add salt and pepper to taste.
- Stir ⅔ of the cheese into the cabbage mix and place in a baking dish.
- Sprinkle the rest of the cheese on top and bake for 15–20 minutes or until the cheese browns nicely.
- Serve with a green salad.

I just want to make sure, since I figured the extra loads of butter or oil is supposed to help us eat more fat.
I know we should only eat till we are satisfied.
And I know this is a silly question but I had to ask to make sure! :)

It was amazing. I don't dislike cabbage, exactly, but it has never been something I've gone out of my way to eat. That has changed with this recipe. I can hardly wait to try the TexMex version.
What size baking dish?????
Does anyone have the calorie, fat, protein, carb breakdown in grams?
It says 4 servings but that doesn't tell me very much. I am tracking the macro nutrients.

Could use less cheese also. Somewhat bland even with the tex mex seasoning.
And the microwave tip (pre-cook) worked well. Will make again with modifications to butter and cheese.
He did suggest some sort of tomato sauce, and I think that's a good idea. I used a liiitttle less butter & cheese and was still satisfied. May even use it as a "lasagne" meat sauce.
The recipes are quick, easy & satisfying! I've lost over 16kg so far (7 months) & thinking I may need to gain a few kilos (currently 48.5kg), but loving the easy & tasty meal preps & planning.

Also, I have struggled with the amount of fat and super fatty ingredients in these recipes. I know it's intentional so people feel more satisfied, but I've had a hard time getting my palate (i.e. gag reflex) to accept it. This time I backed of the butter and cheese a little. I only used 1/4 pound (1 stick) of butter across the dish and I also cut back on the cheese some. I probably used a 1/2 pound of cheddar or a little less. It was still a tad greasy, but not bad. It tastes like eating tacos!
I used the Diet Doctor tex-mex seasoning recipe. I added the optional salt to the seasoning mix so I did not add extra salt and pepper like this recipe suggested. Even with the extra meat, it was well seasoned. I'll make this again =)
