Instructions

  1. Stir together the herb butter in a small bowl. Set aside.
  2. Brown the scallops for no more than 30 seconds on each side, in a hot pan so that they are nicely browned.
  3. Place the scallops in four serving bowls or shells. Place a generous amount of herb butter on top.
  4. Bake in the oven, using the broil function for a few minutes at 450°F (225°C) or until the butter starts to bubble.

Tip!

Make sure the scallops are dry before broiling, let sit on a paper towel to dry off. Play around with different herbs! Try fresh thyme, or chives for a different flavor profile.

Types of scallops

For this recipe we use larger scallops, called "sea scallops." Sea scallops are commonly sold by the pound (450 g); on average there are 20-30 sea scallops per pound. However, the amounts sold per pound can vary.

So scallops come in many sizes. Are you able to clarify the portion of scallops in grams or ounces?

Hi, Mary! This is an appetizer with 2 scallops per serving, so it should generally be the bigger sea scallops, not bay scallops. Hope this helps!
