Oooey, gooey, cheese-stuffed meatballs will make everyone swoon. Have plenty of napkins on hand, and prepare to watch these low-carb treats disappear... they're magically delicious!

Ingredients

  • 25 oz. 700 g ground beef
  • 1 tbsp 1 tbsp dried basil
  • ½ tsp ½ tsp salt
  • 2 pinches 2 pinches pepper
  • 2 tbsp 2 tbsp cold water
  • 4 oz. 110 g mozzarella cheese
  • butter for frying

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. In a large bowl, combine the beef, basil, salt, pepper, and a little cold water. Mix well with your hands or a large wooden fork.
  2. Form 10 flat patties, about 3–4 inches (8–10 cm) in diameter and ½ inch (1 cm) thick.
  3. Cut the mozzarella into 10 pieces and place one piece on each patty. Wrap the patty around the cheese and form into a ball.
  4. Fry in butter on medium heat until the juices run clear.

Tip!

Turn those juices into a delicious sauce! Just add 1-2 cups of heavy whipping cream to the pan juices and bring it to a boil. Stir and simmer for a few minutes to reduce to desired consistency. You can deepen the flavors even more by adding 1 tablespoon gluten-free Japanese Tamari soy sauce and a little black pepper. Soy sauce is salty all on its own, so if you use it, just hold off on salting the meat.

Note: Because the meat will shrink during frying, some of the cheese might slowly leek out of the balls by the end of the cooking process. We consider that a visually delicious bonus!

    Look at the box in the top left corner of the picture where it says strict low carb. If you hover your mouse over that you find macros and the amount of carbs per serving.

    Sorry about that not up to it with the technology as l commented had the stuffed meatballs for tea tonight my family thourouly enjoyed it so simple to make thank you.

    I made the meat balls today and the were not bad, but still... much to improve: too much water and too little seasoning. Instead of the water I would use an egg to bind the ground beef.
    And before frying in butter maybe they need to be poached in boiling water for a few minutes and then rest to cool them off.
    However next time they will be perfect.

    Made these today. I added some steak seasoning and garlic powder to the burger. While frying, the burger would split, exposing the cheese. Not a big deal until i noticed the cheese was completely melting out of the meatball. I may have overcooked them because they were a little dry.

    Used shredded mozzarella cheese for this. They were devoured pretty fast by the kids that the hubs didnt get any, and he and I are the ones doing LCHF. Next time I'll double from 4 to 8, so that we have enough for lunch the next day.

    I agree with the comment above... Shredded mozzarella is helpful in keeping these from not falling apart as they are cooking.

    We loved these and will make them again. Prepared them in the morning and put them in the fridge which firmed them up before cooking so they didn't fall apart.

    I added some eggs and pysyllium seeds. They were rather tasteless and I am Swedish so I know about meatballs. A tip is to use garlic and other flavours like paprica powder. Feel free to add different flavors.

    How can you have 4 servings if there are 10 patties? is the serving size for 1 or two meatballs? or 2 and 1/4? rather way I am going to try them!

    I just came cross this meatball recipe and saw your comments for improvement. I think I’m going to try that tonight. It sounds like you know what you’re doing and I’m wondering what poaching before frying does for the meatballs? And A few other people commented that it might be better to use shredded cheese. What’s your thoughts?

    day--Not fun at all--and don't like starting over!) So I budget wisely to go low.

    If you used 25oz ground beef, that made 4 servings. If you used less ground beef, it made fewer servings. The 1g net carbs is per serving and the original recipe is written for 4 servings, but many scale it to make less if doing the two week challenge.

    These look delish but can someone please tell me what tamari is which is mentioned in the tips at the bottom of the recipe. It seems as though it might be some sort of soy sauce which I thought was a no-no for keto meals, as soy products supposedly mess with your hormones. Is soy sauce different because the beans are fermented?
