  • 5 oz. 140 g melted butter
  • 8 8 eggeggs
  • 1 tsp 1 tsp vanilla extract
  • 2 tsp 2 tsp baking powder
  • 13 cup (1¼ oz.) 80 ml (32 g) coconut flour
Blueberry Butter
  • 3 oz. 85 g butter
  • 1 oz. 28 g fresh blueberries


Instructions are for 4 servings. Please modify as needed.

  1. Mix melted butter and eggs. Add remaining ingredients and mix to a smooth batter using an electric hand mixer.
  2. Allow to rest for 5 minutes while the waffle iron heats to medium.
  3. After properly heated, pour batter into iron and bake until golden. Baking time depends on the size of your waffle iron; we filled ours with 34 cup (112 dl) batter. Repeat with remaining batter.
  4. Mix butter and blueberries with an electric hand mixer and serve with waffles.



No time to whip up blueberry butter? Then why not serve the waffles with butter and cinnamon or a dollop of whipped cream and berries?

If the waffles taste a bit eggy at first, let them cool, refrigerate them, and then use a toaster, skillet, air fryer, or oven rack to warm them. Keto and low-carb waffles and pancakes often have a different taste or texture over time.

    New to Keto/low carb diet.. They aren't bad, probably one of the better ones out there but deff eat it with something nice and creamy because the after taste is a little much for me. Guess ill get used to it, but i really miss real bread and waffles lol

    I wasn't keen on these as waffles but I had one left and when I tried it cold later on I preferred it. next time I made them I left out vanilla essence and added touch of salt and used it as bread in a sandwich with butter and ham yum yum best bread substitute yet and I have tried them all. about to pop one in toaster so see what its like

    Best waffles recipe so far! This is the first time that I try to make keto waffles that don't suck, don't fall apart and the batter is not pouring out of the waffles iron. Hint: I used coconut oil in the batter instead of butter, I find coconut flour & butter don't taste good.

    I thought we weren’t doing the “net carbs” thing... Is there an article or instructions about this on the DietDoctor website, so that I can clear up my confusion?

    The first time I made this, I used the 2-serving recipe, and it was fantastic. The second time, I used the 4-serving recipe, and it tastes way egg-y. Here is why: Every ingredient is doubled except for the coconut flour. This needs to be fixed for sure.

    Did they change the recipe? 1/3 is double 1/6 and that is what is says now. Would like to know before I try because I don't like egg-y tasting breads.

    How do you add these to a meal plan? They're categorized as a dessert so they don't come up when im searching through the meal plans.

    These are wonderful. I serve them with homemade raspberry and blueberry chia jam, sprinkled with a tiny bit of erythritol. So good, and 4 year old approved, too! ;)

    That depends on how many waffles your batch makes. This recipe makes 4 total servings.

    New to keto so made just 2 servings, substituting 3x almond flour for the coconut flour and let the batter rest as recommended. Great texture. Had with butter and strawberries instead of blueberries. Good breakfast, couldn't eat a full serving because so filling. Only downside is the aftertaste that is still with me even after a savoury lunch. Maybe the ones I froze will be less potent.

    I LOVED these for breakfast! Some people say the waffles are to eggy, but I ate them with butter, sugar free maple syrup and bacon, and they were HEAVEN! Even my kids who generally pass on waffle keto alternatives ate them with powdered sugar without a slightest frown.
    Oh, and the recipe gave me 10 really pretty, thick waffles.

    I've just made the batter for the waffles and it is very stiff, definitely not pouring consistency, can I add a little water or is this because I let the batter sit for too long and it went cold?

    These definitely took care of my "I want a waffle" state of mind! I will have to try them again because I like a crisp waffle (and that is in the description). Every one I made was baked a little longer but I ran out of batter before I got them baked long enough to be crisp.
