Keto no-noodle chicken soup
Ingredients
- 4 oz. 110 g butter
- 2 tbsp 2 tbsp dried minced onion
- 2 (2¾ oz.) 2 (80 g) celery stalk, choppedcelery stalks, chopped
- 6 oz. 170 g mushrooms, sliced
- 2 2 minced garlic cloveminced garlic cloves
- 8 cups 1.9 liters chicken broth
- 2 oz. 55 g carrot, slicedcarrots, sliced
- 2 tsp 2 tsp dried parsley
- 1 tsp 1 tsp salt
- ¼ tsp ¼ tsp ground black pepper
- 1½ (22⁄3 lbs) 1½ (1.2 kg) rotisserie chicken* , shredded
- 5 oz. 140 g green cabbage, sliced into strips
Per serving
Instructions
- Melt the butter in a large pot, over medium heat.
- Add dried onion, chopped celery, sliced mushrooms and garlic into the pot and cook for 3-4 minutes.
- Add broth, sliced carrot, parsley, salt, and pepper. Simmer until vegetables are tender.
- Add cooked chicken and cabbage. Simmer for an additional 8-12 minutes until the cabbage “noodles” are tender.
Tips
*One rotisserie chicken yields about 4 cups (1.25 lb, 600 g) of shredded white and dark chicken meat.

That is going to vary based on how much your soup reduced in volume as you cooked it.
Shred 2 rotisserie chickens. Use the meat from one and half the meat from the other. If you'd prefer to just use one chicken, you can scale the recipe to make 5 servings.

From what I have read elsewhere, rotisserie chickens can weigh anywhere from 1.5 to 4 pounds or more, cooked, depending on where you buy them. It would be very helpful if you indicated an approximate raw weight for a "rotisserie chicken", so those of us roasting our own for broth as well as meat, have at least some idea of how much meat you are actually talking about.

Just want everyone to be conscious of the fact that 1/4 cup of salsa contains 6+ grams of carbs. There are other products with no carbs that you can add to give it a zip. DIet Doctor actually has a Mexican spice recipe or you can add dashes of tabasco sauce.

Another reminder to my Keto friends. Minced onion contains zero carbs whereas fresh onion can have 7 - 10 grams of carbs.
