Ingredients

  • 4 tbsp 4 tbsp mayonnaise
  • 1 tbsp 1 tbsp whole-grain mustard
  • 4 4 large egglarge eggs
  • water, ice
  • 1 tbsp 1 tbsp olive oil
  • 2 2 garlic clove, thinly slicedgarlic cloves, thinly sliced
  • 1 tbsp 1 tbsp butter, for frying (optional)
  • 8 oz. (2½ cups) 230 g (600 ml) broccoli, florets
  • 4 oz. 110 g kale, chopped
  • 2 (1 oz.) 2 (30 g) scallion, choppedscallions, chopped
  • 1 (7 oz.) 1 (200 g) avocado, pitted, and flesh slicedavocados, pitted, and flesh sliced
  • salt or pepper, to taste
  • 1 pinch 1 pinch chili flakes

Instructions

  1. Mix the mayonnaise and mustard together in a small bowl. Set aside.
  2. Place the eggs in a saucepan, and fill with water, about 1" (2.5 cm) higher than the eggs. Cover, and bring to a boil over high heat. Once boiling, remove from heat, and leave in water to cook, based on preference: 10-12 minutes (hard-boiled), or 6-8 minutes (medium-boiled), or 5-6 minutes (soft-boiled). Meanwhile, set aside a bowl filled with ice-cold water.
  3. Using a slotted spoon, place eggs in the ice water bath for 3-5 minutes before peeling. Peel under running water and then slice into halves or quarters. Set aside.
  4. Heat the oil in a large frying pan over medium heat. Add the sliced garlic and fry until golden. Remove the garlic from the pan, and place on a paper towel to crisp. Save the garlic-infused oil in the pan.
  5. Increase the temperature to medium-high, add the butter (if using), and stir to combine with the olive oil. Add the broccoli, kale, and scallions. Using tongs, toss to coat and fry for about 5 minutes, or until slightly tender.
  6. Season the warm kale and broccoli salad with salt and pepper. Plate with the eggs, avocado, and mustard mayonnaise.
  7. Finish the dish with a pinch of red chili flakes, and fried garlic slices for extra flavor and crunch.

Tip

Baby kale or spinach makes the greens extra tender; buy them pre-washed to save on prep-time.

    Looking at the photograph, I wonder what the round 'fried' or 'crisped' looking things with a hole in the middle are? Some kind of garnish? I didn't find anything in the recipe that would look like that, at least here in Canada where I live. Hints anyone?..... Anyway, it looks like a fine recipe and I'll try it.

    They are included in "vegetables" in step 5.

    This recipe was very easy and also very filling and delicious. I saw that the scallions were listed but not included in the recipe. The picture shows they are a garnish on top so that is how we used them. This recipe is a keeper for my hubby and I.

    I wish the picture showed the vegetables more and not just the toppings. For me, this salad's use of cooked vegetables is interesting and I would love to see how they look when done. It sounds wonderful though and I will be making it.

    How does garlic have a perfect hole in the center, I work with elephant and regular garlic all the time and it never looks like this? ( someone said that crisp circular object on the salad was garlic) I would like to know what it is as well, its really a nice finishing touch and texture to the salad presentation.

( someone said that crisp circular object on the salad was garlic) I would like to know what it is as well, its really a nice finishing touch and texture to the salad presentation.

    Hi Leah! I just asked the recipe team and the picture was taken from a previous version of the recipe. It was a root vegetable of some sort but the team removed it from the ingredients. It didn't make sense to buy a whole vegetable to just use 2-3 slices for texture!

    I don't like raw kale and this is the first time I tried cooked kale. Reminded me a lot of spinach. I think I'll likely just stick with spinach next time. I'll have to look up the difference in nutrition. I think kale is "trendy" and I don't want to bother with it.
    In the recipe it calls for "whole grain mustard". I wasn't quite sure what that is? Mustard as in ketchup and mustard or the seasoning of "dry mustard". I put "powdered dry mustard" in the mayonnaise and tasted it and it was very bitter so I assumed it meant good ol regular mustard. It was nice with the mayonnaise and with the dish. It would be helpful if items are listed with a little more clarity with their regular names. I think this was nice for a change, but I'd give this dish a 3 out of 5 starts when compared to the other recipes I've b
