Ingredients

  • 5 oz. 150 g fresh raspberries or fresh blueberries or fresh strawberries
  • 23 cup 150 ml heavy whipping cream
  • ¼ tsp ¼ tsp vanilla extract

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. If you are using frozen berries, let thaw at room temperature. Fresh berries are also best if they are at room temperature.
  2. Whip the heavy cream fluffy, until soft peaks form. It should not get grainy or too firm. Add the vanilla towards the end.
  3. Serve immediately with the berries.

Tip!

Raspberries are low in carbs, while strawberries and blueberries contain more carbs. The nutrition calculation is based on raspberries (full fruits & berries guide).

    1 pinch vanilla? Not quite sure what that means. Most vanilla in the U.S. is in the form of liquid extract.

    I love all fresh fruits but trying very hard to cut the carbs with fruit on the LCHF way of healthy eating. I do have some now and again and it helps when we have fresh fruit growing in our back yard. We have several varieties of grapes, blackberries and red raspberries and apples. Thanks DietDoctor for all of the great recipes.

    I do this with frozen fruit and pour cream on top - leave it for a few minutes and it just like ice cream

    I have recently been diagnosed with very high blood pressure. I have had an ECG and all my bloods taken which they say are ok. However my bad LDL is 3.66 and my good HDL is 2.64 it gives me an overall figure of 6.4 which they say would be ok if my blood pressure wasn't so high as the ratio of bad to good is ok. I started cutting out all bread, rice, pasta and potatoes from my diet and following some of the high fat low carb recipes on your site over the last six months and I have gone from 64 kilos to 55 kilos in that six months. My question is does following this low carb diet increase bad cholesterol as well as good and if so can you make any diet recommendations as to how I can reduce the LDL.

    Thank you! Just ate that! Just berries with heavy cream. I was feeling terrible.. probably the keto flu. Maybe dropping my carbs TOO low. In twenty minutes I felt so much better and that combination went down very well. Have been having a hard time tolerating keto meals

    Heavy whipping cream has no carbs, 10 raspberries have 3 grams of carbs, so why are 6-gram carbs per serving? I don't get it, can you please tell me where the other 3 grams of carbs coming from?

    Heavy cream is not 0g carbs as it has lactose/milk sugar in it. Most serving sizes on nutrition labels are small enough that the manufacturers can round down. The 3g carbs are from the heavy cream.

    Hello Diet Dr . I am happy to start the challenge , but I want to know if I can eliminate the fruits? Anything sweet gives me cravings. I started on my own since May 30 a ketigenic duet based on the one I followed with physicians , but including 3 portions a day if very small quantities . Thus was 5 years ago . The also were giving me a kind of aminoácids injection as the diet was of 900 cal before the maintenance stage. I gained it all back in this time . My regular way of eating is not a lot of carbs . I am used to my salads, but I was eating more fruit . I am 59 and weight now 156,8 lbs after lowering from 160 lbs in May 30 . I am stuck here and I am even eating less than what you are telling here to eat . I am afraid ig gaining wait if I add more food . I checked all what I eat and u reached max 1050 cal , don’t feel hungry , have lots of energy no cravings as I don’t eat any carbs , not even artificial sweeteners . I eat my protein , cottage cheese 4%, fresh mizarella, fera cheese in my salads, olives, spinach baby green leaves mix , cherry tomatoes (only 5 in my salad) Persian cucumbers, celery , nuts without salt . 2 eggs every morning . Drink 10 glasses of water a day . At night I try not to eat to not gain weight in the morning . I found out that when I don’t eat anything dunce 5.30 pm till the next morning . The scale goes down . Now I know is too low cal and I want to start my training for 1/2 marathon next year . I jogged 1st time on ketosis alternating with walking 4 times a week and feel great , but I don’t loose weight and I measure myself since May 30 and not even a cm I lost . My cloths are the same . I stopped eating carbs since then and the only thing I lost is the 4 pounds from the 1st day of 30 of May that I fast eating only celery 1/2 cup of cottage cheese and 9 almonds with 12 glasses of water for 1 day . Since then I don’t go down of 156,8 lbs . Did I ruined my metabolism ? Or due to being in menopause I cannot lose anything , not even in ketosis? I bought the ketosis strips and I am in the 5-15 mg/l. Which is correct . Sorry was too long , but I don’t know what to do . I am afraid of eating more and I am not hungry now , but happy that I don’t have any more cravings . I don’t think about sweet things any more . What can I do to start loosing fat? And weight. I want to feel lighter while jogging . Thanks in advance for your help . Diana
