Ingredients

  • 1 oz. 28 g butter or olive oil, for greasing
  • 2 lbs 900 g chicken drumstickchicken drumsticks
  • salt and pepper
  • 1 1 lemon, the juicelemons, the juice
  • 2 tbsp 2 tbsp olive oil
  • 7 7 garlic clove, slicedgarlic cloves, sliced
  • ½ cup (¼ oz.) 120 ml (8 g) fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 450°F (225°C).
  2. Grease the baking pan generously with the butter or oil and place the chicken drumsticks on the pan. Salt and pepper to taste.
  3. Drizzle the lemon juice and olive oil over the chicken pieces. Sprinkle the garlic and parsley on top.
  4. Bake the chicken until golden and the garlic slices have turned brown and roasted for about 30–40 minutes or until the internal temperature reaches at least 165°F (74°C). The baking time may be longer if your drumsticks are on the larger size. You can lower the temperature a little towards the end of the baking time if your drumsticks are becoming too dark.

    I'm sure it is fine to use a garlic crusher aswell.

    In order for a recipe to be considered "keto" it must be low carb and high fat. This recipe has more protein than fat. With the very low carb count, you could easily add fat and enjoy this dish.

    The skin should crisp up as it is baked. If it is not crispy enough you can turn on the broiler for a few minutes.

    I’m new here and I don’t know how to read the carbs info. Like for this recipe: it is 3g per drumstick? How do I read that?

    The nutrition information is for each serving. There are 4 servings in this recipe, so you would divide the 2 lbs of drumsticks into 4 equal servings.

    The temperature would be the same. It is best to use a thermometer to determine the doneness of the chicken breast as the size of chicken breasts can vary greatly. If it is boneless breast it will be about 15-20 minutes is a good place to start.

    Yes, you can use thighs instead. The cooking time should be similar, but I would recommend using a meat thermometer to ensure the chicken is cooked thoroughly.

    Is there really 64 g of protein per serving ? That would be like 64 g for 2 drumsticks. Google says that a large drumstick is about 17g. How did you calculate 64 g ? Thank you :)

    Thanks for your question! The serving size is 8 oz of drumsticks. The meat from 2 medium drumsticks weighs approximately 100 grams, which provides about 26 to 28 grams of protein. So the amount of protein in this recipe is about what you'd get in 3 drumsticks, not 2.
