Ingredients

  • 1 tbsp 1 tbsp olive oil
  • 1½ oz. (413 tbsp) 45 g (65 ml) yellow onion, dicedyellow onions, diced
  • 2 2 garlic clove, crushedgarlic cloves, crushed
  • 1 lb 450 g ground beef
  • 1½ oz. (423 tbsp) 45 g (70 ml) red bell pepper, dicedred bell peppers, diced
  • 1½ oz. (423 tbsp) 45 g (70 ml) green bell pepper, dicedgreen bell peppers, diced
  • 2 tsp 2 tsp ground cumin
  • 1 tsp 1 tsp chili powder
  • 2 tsp 2 tsp tomato paste
  • 8 oz. (1 cup) 230 g (220 ml) crushed tomatoes
  • 4 oz. (1 cup) 110 g (230 ml) shredded cheddar cheese
  • salt and pepper to taste
  • 2 tbsp 2 tbsp fresh cilantro, chopped

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Dice the onion.
  3. Heat up a large skillet with olive oil. Add the onion and garlic and fry until soft. Add the ground beef, and cook until all the meat has browned.
  4. Add the peppers, stir, and cook until soft.
  5. Add the cumin, chili powder, tomato paste, tomatoes, salt, and pepper, and stir well.
  6. Place contents from the pan into a baking dish.
  7. Sprinkle the shredded cheese over evenly and cook in the oven for 20 minutes.
  8. Garnish with cilantro before serving.

Tip

To reduce dishes, you can also cook the beef and vegetables in an oven-safe skillet. When the beef is browned, simply top with cheese and place into the oven.

Using both red and green peppers adds flavor, but if you prefer, you can just use one or the other.

Serve with a dollop of sour cream.

    How do we calculate ml of peppers into grams - for each food, they have their own density - is it not simpler to state a more common measurement unit ?

    I made this for lunch today. I used an air fryer and substituted my own chili & Tex-Mex spices. It was very tasty and filling.

    Excellent recipe, my family loved it. I followed the recipe exactly as stated and the amount for 4 people. Turned out it wasn't really enough for the three of us, so next time I'll make the 6 serving amount. Only change was that I added a small can of drained, diced chilies. I couldn't find a green pepper, so I used a red and an orange pepper, and it tasted great. Super good recipe, everyone wants it again soon! Easy to prepare, only 20 minutes to bake, and this one is a definite winner. I served it with a green salad.
